This Healthy Chinese Ground Beef & Cabbage Stir-Fry is a quick, flavorful one-pan meal made with lean ground beef, crisp-tender cabbage, carrots, garlic, ginger, and a savory homemade sauce. It’s satisfying without being heavy and makes a delicious weeknight dinner served on its own or over rice.
Ingredients
For the Stir-Fry
- 1 lb (450 g) lean ground beef
- 5 cups finely shredded green cabbage
- 1 medium carrot, julienned or grated
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced
- 1 tablespoon olive oil or avocado oil
For the Sauce
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon water
- ½ teaspoon red pepper flakes, optional
- ¼ teaspoon black pepper
For Garnishing
- 1 tablespoon sesame seeds
- Sliced green onions
- Fresh cilantro, optional
Directions
1. Prepare the Sauce
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, water, red pepper flakes, and black pepper.
Set aside.
2. Brown the Beef
Heat a large skillet or wok over medium-high heat.
Add the oil and ground beef.
Cook for approximately 6–8 minutes, breaking the beef apart with a wooden spoon, until browned and fully cooked.
If there is a large amount of excess grease, carefully drain it.
3. Add the Aromatics
Add the sliced onion, minced garlic, and fresh ginger.
Stir-fry for approximately 1–2 minutes, until the onion begins to soften and the garlic and ginger become fragrant.
4. Add the Vegetables
Add the shredded cabbage and carrot.
Toss everything together and cook for approximately 4–6 minutes.
The cabbage should soften while still retaining a little bite.
For softer cabbage, cook an additional 2–3 minutes.
5. Add the Sauce
Pour the prepared sauce over the beef and vegetables.
Toss thoroughly so everything is evenly coated.
Cook for another 2–3 minutes, allowing the sauce to reduce slightly and soak into the cabbage and beef.
6. Finish the Stir-Fry
Turn off the heat.
Stir in the sliced green onions.
Taste and adjust the seasoning if needed. A small splash of rice vinegar can add extra brightness.
7. Garnish and Serve
Sprinkle with sesame seeds and additional green onions.
Serve immediately.
Serving Ideas
Enjoy the stir-fry on its own for a lighter meal, or serve it with:
- Steamed jasmine rice
- Brown rice
- Cauliflower rice
- Quinoa
- Rice noodles
- Lettuce cups
For extra freshness, serve with cucumber slices or a simple side salad.
Tips for the Best Stir-Fry
Use a large skillet: Overcrowding can cause the cabbage to steam rather than stir-fry.
Don’t overcook the cabbage: A little crunch gives the dish a much better texture.
Fresh ginger makes a difference: It adds a bright, aromatic flavor that balances the savory beef.
Use low-sodium soy sauce: This gives you more control over the saltiness.
Make it spicy: Add extra red pepper flakes, chili garlic sauce, or sliced fresh chilies.
Easy Variations
Chicken Cabbage Stir-Fry
Replace the ground beef with ground chicken or turkey.
Extra Vegetable Version
Add sliced bell peppers, mushrooms, broccoli, or snap peas.
Sweet & Spicy Beef
Increase the honey slightly and add chili flakes for a stronger sweet-and-spicy flavor.
Garlic Beef & Cabbage
Add another clove or two of garlic for a more pronounced garlic flavor.
Low-Carb Bowl
Serve over cauliflower rice instead of regular rice.
Storage
Allow leftovers to cool before transferring them to an airtight container.
Refrigerate for up to 3–4 days.
Reheat in a skillet over medium heat or in the microwave until thoroughly heated.
You can also freeze the cooked stir-fry for up to 2 months, although the cabbage may become softer after thawing.
This healthy Chinese-inspired ground beef and cabbage stir-fry is savory, colorful, filling, and incredibly easy to make—a delicious one-pan meal that’s ready in about 30 minutes.
