For the Lemon Dressing
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 small garlic clove, minced
- ½ teaspoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Directions
1. Marinate the Chicken
Place the chicken in a large bowl or resealable bag.
Add olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, black pepper, and thyme.
Toss until the chicken is thoroughly coated.
Cover and refrigerate for at least 30 minutes. For deeper flavor, marinate for up to 4 hours.
2. Prepare the Yellow Rice
Rinse the rice under cool water until the water runs mostly clear.
Heat the olive oil in a saucepan over medium heat.
Add the rice and toast for approximately 1–2 minutes, stirring occasionally.
Add the chicken broth, turmeric, salt, pepper, and garlic powder.
Bring to a boil.
Reduce the heat to low, cover, and simmer for approximately 15–18 minutes, or until the rice has absorbed the liquid and is tender.
Remove from the heat and let it sit covered for 5–10 minutes.
Fluff gently with a fork.
3. Cook the Chicken
Heat a large skillet or grill pan over medium-high heat.
Remove the chicken from the marinade and allow excess marinade to drip off.
Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until browned and cooked through.
The chicken should reach an internal temperature of 165°F (74°C).
Transfer to a cutting board and let it rest for 5 minutes before slicing.
4. Make the Fresh Salad
In a large bowl, combine:
- Diced tomatoes
- Cucumber
- Red onion
- Kalamata olives
- Feta
- Parsley
- Dill
Toss gently.
5. Make the Lemon Dressing
In a small bowl or jar, combine olive oil, lemon juice, red wine vinegar, oregano, garlic, honey, salt, and pepper.
Whisk or shake vigorously until combined.
Pour the dressing over the salad and toss gently.
6. Assemble the Bowls
Divide the warm yellow rice among four bowls.
Slice the chicken into strips or bite-sized pieces and arrange it over the rice.
Add a generous portion of the fresh Greek salad alongside the chicken.
Finish with extra feta, fresh herbs, and a drizzle of lemon dressing.

Tips for the Best Greek Chicken Bowls
Don’t skip the marinade: Even 30 minutes gives the chicken noticeably more flavor.
Let the chicken rest: Resting keeps the juices inside instead of losing them when you slice it.
Rinse the rice: This removes excess starch and helps produce fluffy individual grains.
Don’t overcook the rice: Once the liquid is absorbed, remove it from the heat and let it steam under the lid.
Dress the salad shortly before serving: This keeps the vegetables crisp and fresh.
Meal Prep Instructions
These bowls are excellent for meal prep.
Cook the chicken and rice ahead of time and refrigerate them in separate containers.
Prepare the salad ingredients separately and add the dressing just before eating.
Store everything refrigerated and use within 3–4 days.
For meal prep, keep the feta, dressing, and fresh vegetables separate from the warm rice and chicken until serving.
