Ingredients
For the Peach Filling
- 6 cups fresh peaches, peeled and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- Pinch of salt
For the Crust
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup cold unsalted butter, cut into small cubes
- ¾ cup ice-cold water, plus more if needed
For the Topping
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
- ½ teaspoon ground cinnamon
Instructions
1. Prepare the Peaches
Preheat your oven to 375°F (190°C).
Place the sliced peaches in a large bowl. Add the granulated sugar, brown sugar, flour, cinnamon, nutmeg, vanilla, lemon juice, and salt.
Gently toss until the peaches are evenly coated.
Set aside for about 10–15 minutes to allow the peaches to release some of their juices.
2. Make the Crust
In a large bowl, whisk together the flour, salt, and sugar.
Add the cold cubed butter and work it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Gradually add the ice water, mixing just until the dough comes together.
Be careful not to overwork the dough.
Divide the dough into three portions. Shape each portion into a flat disk, wrap, and refrigerate for about 20–30 minutes.
3. Roll Out the Crusts
On a lightly floured surface, roll each portion of dough into a thin sheet large enough to fit your baking dish.
You can use a 9×13-inch baking dish or a deep 9-inch baking dish.
4. Build the First Layer
Grease the baking dish lightly.
Place the first crust layer into the bottom of the dish.
Prick the crust several times with a fork.
Spoon approximately half of the peach filling over the crust, spreading it evenly.
5. Add the Second Crust
Place the second layer of pastry over the peaches.
Add the remaining peach mixture on top.
Don’t worry if the pastry doesn’t look perfect—this is a rustic cobbler.
6. Add the Final Crust
Place the third crust over the top.
Cut several small slits in the crust to allow steam to escape.
Brush the top with melted butter and sprinkle with the cinnamon-sugar mixture.
7. Bake
Place the cobbler in the preheated oven and bake for approximately 45–60 minutes, or until the crust is deeply golden and the peach filling is bubbling around the edges.
If the top begins to brown too quickly, loosely cover it with aluminum foil for the remainder of the baking time.
8. Cool and Serve
Remove the cobbler from the oven and let it rest for at least 20–30 minutes.
This gives the peach filling time to thicken slightly.
Serve warm with vanilla ice cream, whipped cream, or a drizzle of caramel sauce.
Tips for the Best Peach Cobbler
Use ripe peaches: Fresh, flavorful peaches make the biggest difference in the finished dessert.
Frozen peaches work too: Thaw and drain them well before using to prevent excessive liquid.
Keep the butter cold: Cold butter creates a flaky, tender crust.
Don’t overwork the dough: Mixing too much can make the crust tough instead of flaky.
Let it rest: Cutting into the cobbler immediately can result in a runny filling.
Easy Variations
Add ½ cup chopped pecans to the peach filling for a nutty crunch.
For extra warmth, add a pinch of ground ginger or cardamom.
You can also replace part of the peaches with fresh blueberries, blackberries, or raspberries.
For a richer topping, sprinkle coarse sugar over the crust before baking.
Storage
Cover leftover cobbler and refrigerate for up to 4 days.
Reheat individual portions in the microwave or warm the entire dish in a 325°F (165°C) oven until heated through.
The cobbler can also be frozen for up to 2–3 months. Thaw overnight in the refrigerator before reheating.
This Triple Crust Peach Cobbler is buttery, fruity, warmly spiced, and wonderfully indulgent. With three layers of golden crust surrounding juicy peaches, it’s a dessert made for anyone who believes the best part of cobbler is the crust.
