The Secret to Extra Juicy Meatballs
Want extra juicy, tender meatballs instead of dry, tough ones? The secret is simple: add moisture to the mixture and avoid overworking the meat. A quick milk-soaked breadcrumb mixture creates a tender texture while grated onion adds even more moisture and flavor.
Ingredients
- 1 lb (450 g) ground beef
- ½ lb (225 g) ground pork
- ½ cup breadcrumbs
- ¼ cup whole milk
- 1 small onion, finely grated
- 1 large egg
- 3 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil, for cooking
Directions
1. Soak the Breadcrumbs
Place the breadcrumbs in a small bowl.
Pour in the milk and let them sit for 5 minutes.
This creates a soft mixture called a panade, which helps the meatballs stay moist and tender.
2. Prepare the Meat Mixture
Add the ground beef and pork to a large bowl.
Add the soaked breadcrumbs, grated onion, egg, garlic, Parmesan, Italian seasoning, salt, pepper, and parsley.
Mix gently with your hands until just combined.
Don’t overmix. Working the meat too much can make the meatballs dense and tough.
3. Shape the Meatballs
Scoop out approximately 2 tablespoons of the mixture for each meatball.
Gently roll into balls, being careful not to pack them too tightly.
You should get approximately 20–24 meatballs.
4. Brown the Meatballs
Heat the olive oil in a large skillet over medium heat.
Add the meatballs in batches if necessary.
Brown them for about 2–3 minutes per side, turning gently until nicely browned all around.
5. Finish Cooking
Reduce the heat and cook until the meatballs reach an internal temperature of 160°F (71°C) for a beef-and-pork mixture.
For even more flavor, simmer the browned meatballs in your favorite marinara sauce for 10–15 minutes until fully cooked and tender.
6. Serve
Serve the juicy meatballs over spaghetti, tucked into toasted rolls, or alongside mashed potatoes, rice, or vegetables.
Spoon plenty of sauce over the top and finish with Parmesan and fresh parsley.
The Juiciness Secrets
1. Use a combination of meats: Beef provides rich flavor while pork adds extra tenderness and fat.
2. Soak the breadcrumbs: Milk keeps the meat mixture moist and helps prevent the meatballs from becoming dry.
3. Add grated onion: Finely grated onion releases moisture directly into the mixture.
4. Don’t overmix: Mix only until the ingredients come together.
5. Don’t pack them tightly: Gentle shaping produces a softer texture.
6. Don’t overcook: Use an instant-read thermometer to check when they’re done.
