Ingredients
For the Crust
- 1½ cups crushed graham crackers
- 4 tablespoons unsalted butter, melted

- 8 oz (225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ cup heavy whipping cream

- 1½ cups fresh strawberries, diced
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
Directions
1. Prepare the Strawberry Topping
Place the diced strawberries in a bowl.
Add the sugar and lemon juice and gently toss.
Let the strawberries sit for 10–15 minutes so they release some of their natural juices.
2. Make the Crust
In a bowl, combine the crushed graham crackers, melted butter, and sugar.
Stir until the crumbs are evenly moistened.
Divide the mixture among 6–8 small dessert cups or glasses.
Press the crumbs down gently to form an even crust.
3. Make the Cheesecake Filling
Beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
Add the vanilla extract and lemon juice and mix until combined.
In a separate bowl, whip the heavy cream until soft peaks form.
Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
4. Assemble the Cups
Spoon or pipe the cheesecake filling over the graham cracker crust.
Smooth the tops with the back of a spoon.
Add a generous spoonful of the macerated strawberries to each cup.
5. Chill
Cover the cups and refrigerate for at least 2 hours, or until the cheesecake filling is nicely chilled and set.
6. Serve
Garnish with a fresh strawberry or a small dollop of whipped cream if desired.
