Ingredients
- 8 large eggs
- ½ cup milk
- 1 cup fresh spinach, finely chopped
- ¾ cup crumbled feta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup finely diced onion
- ¼ cup diced red bell pepper
- 1 clove garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes, optional
- 1 tablespoon olive oil or cooking spray
Instructions
1. Prepare the Oven
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin generously with olive oil or nonstick cooking spray. Make sure the sides are well coated to prevent the egg muffins from sticking.
For easier cleanup, you can also use silicone muffin cups.
2. Prepare the Vegetables
Heat a small skillet over medium heat and add a little olive oil.
Add the diced onion and bell pepper and cook for 2–3 minutes, until slightly softened.
Add the chopped spinach and minced garlic. Cook for another 1–2 minutes, just until the spinach wilts.
Remove from the heat and allow the vegetables to cool slightly.
3. Prepare the Egg Mixture
Crack the eggs into a large mixing bowl.
Add the milk, salt, black pepper, oregano, and red pepper flakes if using.
Whisk thoroughly until the eggs are smooth and slightly frothy.
4. Add the Cheese and Vegetables
Stir the cooked spinach mixture into the eggs.
Add the crumbled feta and shredded mozzarella, reserving a small amount of feta for sprinkling on top if desired.
Mix gently until all the ingredients are evenly distributed.
5. Fill the Muffin Cups
Pour the egg mixture evenly into the prepared muffin tin, filling each cup approximately ¾ full.
Don’t fill them completely to the top because the eggs will puff up as they bake.
Sprinkle a little extra feta over each muffin.
6. Bake
Place the muffin tin in the preheated oven and bake for approximately 18–22 minutes, or until the egg muffins are puffed, lightly golden, and completely set in the center.
A toothpick inserted into the middle should come out clean.
Don’t worry if the muffins puff up significantly while baking—they will naturally settle slightly as they cool.
7. Cool and Serve
Allow the egg muffins to cool in the pan for about 5 minutes.
Run a small knife around the edges if needed, then gently remove them from the muffin tin.
Serve warm with fresh fruit, toast, avocado, or a simple side salad.
Tips for Perfect Egg Muffins
