Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon sugar
- 6 tablespoons cold unsalted butter, cubed
- ¾ cup cold buttermilk
For the Sausage Gravy
- 1 lb (450 g) breakfast sausage
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- ½ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- ¼ teaspoon garlic powder, optional
- Pinch of cayenne pepper, optional
Directions
1. Make the Biscuit Dough
Preheat your oven to 425°F (220°C).
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Add the cold butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Pour in the cold buttermilk and gently stir until a soft dough forms. Don’t overmix.
2. Shape the Biscuits
Turn the dough onto a lightly floured surface.
Gently pat it to about ¾-inch thickness.
Cut out biscuits using a round cutter and place them on a baking sheet.
3. Bake
Bake for 12–15 minutes, or until the biscuits are puffed and golden brown.
Remove from the oven and set aside.
4. Brown the Sausage
While the biscuits bake, heat a large skillet over medium heat.
Add the breakfast sausage and cook for 6–8 minutes, breaking it into small pieces as it browns.
Don’t drain the sausage unless there is an excessive amount of grease.
5. Make the Gravy
Sprinkle the flour over the cooked sausage.
Stir continuously for about 1–2 minutes to cook the flour.
Slowly pour in the milk while stirring constantly to prevent lumps.
Add the black pepper, salt, garlic powder, and cayenne if using.
6. Simmer Until Thick
Bring the gravy to a gentle simmer.
Cook for 5–8 minutes, stirring frequently, until thick and creamy.
If the gravy becomes too thick, add a small splash of milk.
7. Serve
Split the warm biscuits in half and spoon generous amounts of sausage gravy over them.
Serve immediately while hot and creamy.
Recipe Tips
- Keep the butter and buttermilk cold when making the biscuits for a lighter texture.
- Don’t overwork the biscuit dough.
- Freshly ground black pepper gives the sausage gravy excellent flavor.
- If your sausage is very lean, add 1 tablespoon butter before adding the flour.
- For extra richness, replace ½ cup of the milk with heavy cream.
- Leftover gravy can be refrigerated for 3–4 days. Reheat gently with a splash of milk.
