Ingredients

- 1½ lbs potatoes, diced
- 2 tablespoons vegetable oil
- ½ medium onion, diced
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper

- 8 slices bacon
- Butter
- Hot sauce, optional
- Fresh parsley or chives, optional
Directions
1. Make the Biscuits
Preheat the oven to 425°F (220°C).
Whisk together the flour, baking powder, baking soda, and salt.
Add the cold butter and work it into the flour using your fingertips or a pastry cutter until the mixture resembles coarse crumbs.
Pour in the cold buttermilk and gently mix until a soft dough forms.
Turn the dough onto a lightly floured surface and gently pat it to about ¾-inch thickness.
Cut into biscuits using a round cutter.
Place the biscuits close together on a baking sheet.
Bake for 12–15 minutes, until puffed and golden.
Brush the tops with melted butter if desired.
2. Cook the Bacon
Place the bacon in a large skillet over medium heat.
Cook for approximately 4–6 minutes per side, depending on thickness and desired crispness.
Transfer to a paper towel-lined plate.
Reserve a little bacon fat for the potatoes if desired.
3. Prepare the Sausage Gravy
In a skillet over medium heat, cook the breakfast sausage for 6–8 minutes, breaking it apart as it cooks.
Don’t drain all the fat—you need some for the gravy.
Sprinkle the flour over the sausage and stir continuously for about 1–2 minutes.
Slowly pour in the milk while whisking.
Continue cooking for 5–7 minutes, stirring frequently, until thick and creamy.
Season with salt, black pepper, and garlic powder.
If the gravy becomes too thick, add a splash of milk.
4. Make the Breakfast Potatoes
Heat oil or reserved bacon fat in a large skillet over medium-high heat.
Add the diced potatoes.
Cook for approximately 8–10 minutes, stirring occasionally.
Add the onion, paprika, garlic powder, salt, and pepper.
Continue cooking for another 8–10 minutes, until the potatoes are golden brown and tender.
For extra-crispy potatoes, avoid stirring them constantly.
5. Make the Scrambled Eggs
Crack the eggs into a bowl.
Add milk, salt, and pepper.
Whisk until smooth.
Melt butter in a nonstick skillet over low-medium heat.
Pour in the eggs.
Gently push and fold the eggs with a spatula until soft curds form.
Remove from the heat while they are still slightly creamy.
6. Assemble the Southern Breakfast
Split the warm biscuits in half.
Spoon plenty of sausage gravy over the biscuits.
