Soft, Fluffy Chocolate Chip Brioche
This Soft, Fluffy Chocolate Chip Brioche is rich, buttery, lightly sweet, and filled with delicious pockets of chocolate. The eggs, butter, and milk give the brioche its signature tender crumb, while chocolate chips add a bakery-style touch to every slice. (Baking with Butter)
Ingredients
For the Brioche Dough
- ½ cup (120 ml) warm whole milk
- 2¼ teaspoons instant or active dry yeast
- ¼ cup (50 g) granulated sugar
- 4 cups (500 g) all-purpose flour
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- ¾ cup (170 g) unsalted butter, softened and cut into small cubes
- 1 cup (175–180 g) semi-sweet chocolate chips
For the Egg Wash
- 1 egg
- 1 tablespoon milk
Directions
1. Activate the Yeast
Pour the warm milk into the bowl of a stand mixer.
Add the yeast and sugar and gently stir.
Let the mixture sit for 5–10 minutes, until the yeast becomes slightly foamy.
If using instant yeast, this step can still be done for convenience, although it doesn’t require proofing.
2. Add the Flour and Eggs
Add the flour and salt to the bowl.
Mix on low speed using a dough hook until the ingredients begin coming together.
Add the eggs one at a time, followed by the vanilla extract.
Continue mixing until a sticky dough forms.
3. Knead the Dough
Increase the mixer speed to medium and knead for approximately 7–10 minutes.
The dough will initially look sticky and rough, but it should gradually become smoother and more elastic.
4. Add the Butter
With the mixer running on low, add the softened butter one small piece at a time.
Wait until each piece is incorporated before adding the next.
Once all the butter has been added, continue kneading for another 7–10 minutes.
The finished dough should be soft, glossy, elastic, and slightly sticky. Enriched brioche dough requires thorough kneading to develop its structure. (Ugly Duckling Bakery)
5. Add the Chocolate Chips
Add the chocolate chips.
Mix on low speed just until they are evenly distributed throughout the dough.
Alternatively, gently fold them in by hand.
6. First Rise
Lightly grease a large bowl with butter or oil.
Transfer the dough into the bowl and cover it tightly with plastic wrap or a clean kitchen towel.
Place it somewhere warm and allow it to rise for approximately 1½–2 hours, or until noticeably doubled in size.
7. Chill the Dough
For easier shaping and a richer flavor, refrigerate the risen dough for at least 2 hours, or preferably overnight.
Chilling also makes the buttery dough much easier to handle.
8. Shape the Brioche
Grease a 9 × 5-inch loaf pan.
Remove the chilled dough from the refrigerator and place it on a lightly floured surface.
Gently press out some of the air.
Divide the dough into 3 equal portions.
Shape each portion into a smooth ball.
Arrange the three balls evenly inside the prepared loaf pan.
You can also shape the dough into one large loaf if preferred.
9. Second Rise
Cover the pan loosely with plastic wrap.
Allow the dough to rise in a warm place for approximately 45–60 minutes, or until it becomes puffy and rises close to the top of the pan.
Don’t rush this stage—the second rise helps create a light, fluffy crumb.
10. Prepare the Egg Wash
Whisk together the egg and milk.
Gently brush the mixture over the surface of the risen brioche.
This creates the beautiful golden-brown crust associated with classic brioche. (Baking with Butter)
11. Bake
Preheat your oven to 350°F (175°C).
Place the brioche in the oven and bake for approximately 25–30 minutes.
The top should be deeply golden brown and the loaf should sound slightly hollow when gently tapped.
If the top begins browning too quickly, loosely cover it with aluminum foil for the remaining baking time.
12. Cool
Remove the brioche from the oven.
Allow it to cool in the pan for approximately 5–10 minutes.
Carefully remove it from the pan and transfer it to a wire rack.
Let it cool completely before slicing.
This prevents the soft interior from becoming compressed.
Tips for Extra Soft Brioche
Use room-temperature eggs and butter: They incorporate much more easily into the dough.
Don’t add all the butter at once: Gradually incorporating the butter helps the dough develop properly.
Knead thoroughly: The dough should become smooth, elastic, and glossy before the first rise.
Don’t add too much flour: Brioche dough is naturally soft and slightly sticky. Adding excessive flour can make the finished bread dense.
Chill the dough: An overnight refrigerator rest makes shaping easier and can improve the flavor.
Don’t rush the rises: Proper fermentation is one of the keys to achieving a fluffy brioche.
Use good-quality chocolate chips: Semi-sweet or dark chocolate chips balance the sweetness of the rich dough particularly well. (Red Currant Bakery)

Variations
Chocolate Hazelnut Brioche
Add ½ cup chopped toasted hazelnuts along with the chocolate chips.
Dark Chocolate Brioche
Use dark chocolate chips or chunks for a richer, less-sweet flavor.
Orange Chocolate Brioche
Add 1 tablespoon finely grated orange zest to the dough.
Cinnamon Chocolate Brioche
Add 1 teaspoon ground cinnamon to the flour mixture.
Chocolate Chip Brioche Rolls
Instead of making a loaf, divide the dough into 10–12 pieces and shape them into individual rolls. Allow them to rise again before brushing with egg wash and baking.
Storage
Once completely cooled, store the brioche in an airtight container or sealed bag at room temperature for up to 3 days. (Baking with Butter)
For longer storage, wrap the brioche tightly and freeze it.
Frozen brioche can be thawed at room temperature and gently warmed before serving.
Frequently Asked Questions
Why is my brioche not fluffy?
The most common causes are insufficient kneading, under-proofing, or adding too much flour. Make sure the dough becomes elastic before the first rise and allow it enough time to become noticeably puffy.
Can I make the dough the night before?
Yes. After the first rise, refrigerate the dough overnight. Shape it the following day, allow it to complete its second rise, and bake.
Can I use milk chocolate chips?
Yes. Milk chocolate makes the brioche sweeter and gives it a softer, sweeter chocolate flavor.
Can I use bread flour?
Yes. Bread flour can provide additional structure and chew, while all-purpose flour produces a particularly tender crumb.
Can I freeze chocolate chip brioche?
Yes. Wrap the completely cooled loaf tightly and freeze for up to 2 months for the best quality.
