Smothered Chicken Breasts or Thighs
Tender chicken breasts or thighs smothered in a rich, creamy onion gravy make a comforting, flavorful dinner that’s easy enough for a weeknight. The chicken is seasoned and browned before being gently simmered in a savory sauce until tender.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- ½ cup heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons chopped fresh parsley
Directions
1. Season the Chicken
Pat the chicken dry with paper towels.
In a small bowl, combine the paprika, garlic powder, onion powder, thyme, salt, and black pepper.
Rub the seasoning evenly over both sides of the chicken.
2. Brown the Chicken
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and sear for about 3–4 minutes per side, until nicely browned.
The chicken doesn’t need to be completely cooked at this stage.
Transfer it to a plate and set aside.
3. Cook the Onions
Reduce the heat to medium and add the butter to the same skillet.
Add the sliced onions and cook for 6–8 minutes, stirring occasionally, until softened and golden.
Add the minced garlic and cook for another 30–60 seconds.
4. Make the Gravy
Sprinkle the flour over the onions and stir continuously for about 1 minute.
Slowly pour in the chicken broth while whisking to prevent lumps.
Add the heavy cream and Worcestershire sauce.
Stir well and bring the sauce to a gentle simmer.
5. Smother the Chicken
Return the browned chicken to the skillet, nestling each piece into the gravy.
Cover and simmer gently for 10–15 minutes for breasts or 15–20 minutes for thighs, depending on their size.
Cook until the chicken reaches an internal temperature of 165°F (74°C).
6. Finish the Gravy
Taste the gravy and adjust the salt and pepper as needed.
If the sauce is too thick, add a small splash of chicken broth. If it is too thin, simmer uncovered for a few additional minutes.
7. Garnish and Serve
Sprinkle with fresh parsley.
Spoon plenty of the creamy onion gravy over the chicken and serve hot.
