Smoky BBQ Chicken Grilled Cheese
This Smoky BBQ Chicken Grilled Cheese combines tender shredded chicken, smoky barbecue sauce, melted cheese, and crispy golden bread. It’s an easy, satisfying sandwich that’s perfect for lunch, dinner, or a quick comfort-food meal.
Ingredients
- 2 cups cooked shredded chicken
- ½ cup BBQ sauce
- 8 slices sourdough or thick sandwich bread
- 2 tablespoons butter, softened
- 1½ cups shredded smoked cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ small red onion, thinly sliced
- 1 tablespoon chopped fresh parsley, optional
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
Directions
1. Prepare the BBQ Chicken
Place the shredded chicken in a bowl.
Add the BBQ sauce, smoked paprika, and black pepper.
Stir until the chicken is evenly coated.
2. Prepare the Bread
Spread softened butter evenly over one side of each slice of bread.
For extra flavor, you can sprinkle a tiny pinch of smoked paprika over the buttered sides.
3. Build the Sandwiches
Place four slices of bread buttered-side down.
Layer each with smoked cheddar and mozzarella.
Add a generous portion of BBQ chicken and a few slices of red onion.
Top with another layer of cheese and the remaining slices of bread, with the buttered side facing up.
4. Cook the Grilled Cheese
Heat a large skillet over medium-low heat.
Place the sandwiches in the skillet.
Cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crisp and the cheese is completely melted.
If the bread browns too quickly before the cheese melts, reduce the heat.
5. Rest and Slice
Transfer the sandwiches to a cutting board.
Let them rest for 1–2 minutes, then slice in half.
Garnish with fresh parsley if desired.
Serve warm with extra BBQ sauce for dipping.
Recipe Tips
- Use leftover roasted or rotisserie chicken to make this recipe even faster.
- Smoked cheddar gives the sandwich a deeper smoky flavor, while mozzarella creates excellent stretch.
- Don’t use high heat—the bread can burn before the cheese melts.
- Add pickled jalapeños for a spicy, tangy kick.
- Crispy bacon makes a delicious addition.
- A little coleslaw inside the sandwich adds crunch and freshness.
- Serve with fries, potato wedges, or a simple salad.
