Slow Cooker Smothered Chicken and Onions
This Slow Cooker Smothered Chicken and Onions is a comforting, easy dinner featuring tender chicken covered in sweet, savory onions and a rich, creamy gravy. The slow cooker does most of the work, making this a perfect family meal for busy days.
Ingredients
- 4 boneless, skinless chicken breasts or 6 chicken thighs
- 2 large yellow onions, thinly sliced
- 1 can (10.5 oz) cream of chicken soup
- 1 packet (1 oz) dry onion soup mix
- ½ cup chicken broth
- 3 cloves garlic, minced
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 tablespoons butter
- ½ cup sour cream, optional
- 2 tablespoons chopped fresh parsley
Directions
1. Prepare the Chicken
Pat the chicken dry with paper towels.
Season both sides with black pepper and garlic powder.
2. Layer the Slow Cooker
Place the chicken in a single layer in the bottom of a 6-quart slow cooker.
Scatter the sliced onions and minced garlic over the chicken.
3. Make the Gravy
In a bowl, whisk together the cream of chicken soup, onion soup mix, and chicken broth until smooth.
Pour the mixture evenly over the chicken and onions.
Dot the top with butter.
4. Slow Cook
Cover and cook on:
- LOW for 6–7 hours, or
- HIGH for 3–4 hours
Cook until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
5. Make It Creamy
If using sour cream, remove about ½ cup of the hot cooking liquid and whisk it gradually into the sour cream.
Stir the mixture back into the slow cooker during the final 10–15 minutes of cooking.
This helps create a smooth, creamy gravy.
6. Finish and Serve
Carefully transfer the chicken to serving plates.
Spoon the tender onions and creamy gravy generously over the chicken.
Garnish with fresh parsley.
Serve over mashed potatoes, egg noodles, or white rice to soak up the flavorful onion gravy.
Recipe Tips
- Chicken thighs are especially forgiving in the slow cooker and tend to remain juicy.
- Slice the onions thinly so they soften and blend into the gravy.
- Don’t add extra salt until the dish is finished because the onion soup mix and condensed soup can already be salty.
- For deeper flavor, quickly brown the chicken in a skillet before adding it to the slow cooker.
- Add sliced mushrooms for an extra savory variation.
- If the gravy is too thick, stir in a little warm chicken broth before serving.
- Refrigerate leftovers in an airtight container for 3–4 days.
