Slow Cooker Indian Curried Sausages
These Slow Cooker Indian Curried Sausages are hearty, flavorful, and wonderfully comforting. Juicy sausages simmer slowly in a rich curry gravy with onions, tomatoes, and warm Indian-inspired spices. Serve them over fluffy rice or with naan for an easy family dinner.
Ingredients
- 8–10 pork, beef, or chicken sausages
- 1 tablespoon vegetable oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1½ cups beef or chicken broth
- 2 tablespoons tomato paste
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon turmeric
- ½ teaspoon paprika
- ½ teaspoon garam masala
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
- ½ cup coconut milk or heavy cream
- 2 tablespoons chopped fresh cilantro
Directions
1. Brown the Sausages
Heat the oil in a large skillet over medium-high heat.
Add the sausages and brown them for 2–3 minutes per side.
They don’t need to be fully cooked.
Transfer them to the slow cooker.
2. Sauté the Aromatics
Using the same skillet, add the sliced onion and bell pepper.
Cook for 4–5 minutes, until they begin to soften.
Add the garlic and ginger and cook for another 30 seconds.
Transfer everything to the slow cooker.
3. Make the Curry Sauce
In a bowl, combine the diced tomatoes, broth, tomato paste, curry powder, cumin, coriander, turmeric, paprika, garam masala, salt, black pepper, brown sugar, and Worcestershire sauce.
Mix well.
Pour the curry mixture over the sausages and vegetables.
4. Slow Cook
Cover and cook on:
- LOW for 5–6 hours, or
- HIGH for 2½–3½ hours
Cook until the sausages are fully cooked and the sauce is rich and flavorful.
5. Add the Creamy Finish
Stir in the coconut milk or heavy cream during the final 15–20 minutes of cooking.
Taste and adjust the seasoning.
6. Garnish and Serve
Sprinkle with fresh cilantro.
Serve the curried sausages over steamed basmati rice, mashed potatoes, or alongside warm naan or roti.
Spoon plenty of the curry gravy over the top.
