Slow Cooker Creamy Ranch Potatoes
These Slow Cooker Creamy Ranch Potatoes are tender, creamy, cheesy, and packed with delicious ranch flavor. With just a few simple ingredients and minimal prep, the slow cooker does most of the work. They’re the perfect side dish for chicken, steak, burgers, or a family dinner.
Ingredients
- 2½ lb (1.1 kg) baby potatoes, halved
- 1 packet (1 oz) ranch seasoning mix
- 1 cup sour cream
- ½ cup cream cheese, softened
- ½ cup chicken broth
- 1 cup shredded cheddar cheese
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 3 green onions, sliced, optional
- 4 slices cooked bacon, crumbled, optional
Directions
1. Prepare the Potatoes
Wash the baby potatoes thoroughly and cut them in half. If using larger potatoes, cut them into evenly sized chunks.
Place them in the bowl of a 6-quart slow cooker.
2. Add the Seasonings
Sprinkle the ranch seasoning and black pepper over the potatoes.
Add the minced garlic and toss gently to coat.
3. Add the Creamy Ingredients
Add the butter, cream cheese, sour cream, and chicken broth.
Stir gently so the potatoes are coated as evenly as possible.
4. Slow Cook
Cover and cook on:
- LOW for 4–5 hours, or
- HIGH for 2½–3½ hours
Cook until the potatoes are fork-tender.
Avoid overcooking, as the potatoes can become too soft and break apart.
5. Add the Cheese
During the final 15–20 minutes, sprinkle the shredded cheddar cheese over the potatoes.
Cover and allow the cheese to melt.
6. Stir and Finish
Gently stir the potatoes to combine the melted cheese with the creamy sauce.
If the sauce is too thick, add a small splash of warm chicken broth.
7. Garnish and Serve
Sprinkle with fresh parsley and sliced green onions.
For an extra hearty version, top with crumbled cooked bacon.
Serve warm alongside your favorite main dish.
Recipe Tips
- Choose small baby potatoes because they hold their shape well during slow cooking.
- Cut potatoes into similar sizes so they cook evenly.
- Don’t add too much liquid—the potatoes will release some moisture as they cook.
- For extra cheesiness, add Monterey Jack or mozzarella along with the cheddar.
- For a vegetarian version, use vegetable broth instead of chicken broth.
- Leftovers can be refrigerated in an airtight container for 3–4 days.
