Ingredients
For the Chicken
- 2 lbs boneless, skinless chicken breasts
- 1 cup buffalo wing sauce
- ½ cup chicken broth
- 4 oz cream cheese, softened
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 teaspoon ranch seasoning, optional
For the Pasta
- 12 oz penne or rotini pasta
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack or mozzarella cheese
- ½ cup ranch dressing
- ½ cup reserved pasta water, as needed
For Garnishing
- Sliced green onions
- Crumbled blue cheese, optional
- Extra buffalo sauce
- Chopped fresh parsley
Instructions
1. Add the Chicken to the Slow Cooker
Place the chicken breasts in the bottom of your slow cooker.
Season with garlic powder, onion powder, paprika, black pepper, salt, and ranch seasoning if using.
Pour the buffalo sauce and chicken broth over the chicken.
Add the softened cream cheese in small pieces.
2. Slow Cook
Cover and cook on:
- LOW for 4–6 hours, or
- HIGH for 2–3 hours
Cook until the chicken reaches 165°F (74°C) and is tender enough to shred easily.
3. Shred the Chicken
Remove the cooked chicken and place it on a plate.
Shred it with two forks, then return it to the slow cooker.
Stir thoroughly so the shredded chicken becomes coated in the creamy buffalo sauce.
4. Cook the Pasta
While the chicken is finishing, cook the pasta separately according to the package directions until al dente.
Before draining, reserve about ½ cup of the pasta water.
Drain the pasta well.
5. Combine Everything
Add the cooked pasta to the slow cooker.
Stir in the ranch dressing, cheddar cheese, and Monterey Jack or mozzarella.
Mix gently until the cheese melts and the pasta is coated in the creamy buffalo sauce.
If the sauce is too thick, gradually add a little reserved pasta water until you reach your desired consistency.
6. Finish and Serve
Taste and adjust the seasoning.
Drizzle with additional buffalo sauce if desired.
Top with sliced green onions, fresh parsley, and crumbled blue cheese.
Serve immediately while hot and creamy.
Tips for the Best Buffalo Chicken Pasta
- Don’t cook the pasta in the slow cooker for the entire cooking time. It can become mushy. Cooking it separately gives you much better texture.
- Use your favorite buffalo wing sauce and adjust the amount according to how spicy you like it.
- Chicken thighs can be substituted for breasts and will provide an especially juicy result.
- Shred the cheese yourself for smoother melting.
- Add the ranch dressing gradually so you can control the creaminess.
Easy Variations
Extra Spicy
Add cayenne pepper, crushed red pepper flakes, or extra buffalo sauce.
Bacon Buffalo Chicken Pasta
Stir in cooked, crumbled bacon before serving.
Buffalo Chicken Mac and Cheese
Replace the pasta with elbow macaroni and add extra cheddar for a richer version.
Add Vegetables
Mix in steamed broccoli, spinach, or diced bell peppers.
Blue Cheese Version
Add extra blue cheese to the sauce or sprinkle it generously over individual servings.
What to Serve With It
This rich pasta pairs well with:
- Celery and carrot sticks
- Garden salad
- Garlic bread
- Roasted broccoli
- Coleslaw
- Steamed vegetables
- Cucumber salad
Storage
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
When reheating, add a splash of milk, chicken broth, or reserved pasta water to loosen the sauce. Reheat gently until hot.
