Slow Cooker Bone-In Pork Chops
These Slow Cooker Bone-In Pork Chops are tender, juicy, and packed with savory flavor. The pork chops slowly cook in a rich onion and garlic gravy until fork-tender, making this an easy and comforting family dinner.
Ingredients
- 4 bone-in pork chops, about 1 inch thick
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 2 tablespoons Worcestershire sauce
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
Directions
1. Season the Pork Chops
Pat the pork chops dry with paper towels.
Season both sides with garlic powder, paprika, thyme, black pepper, and salt.
2. Sear the Pork Chops
Heat the olive oil in a large skillet over medium-high heat.
Sear the pork chops for approximately 2–3 minutes per side, until nicely browned.
Transfer them to the slow cooker.
3. Add the Onions and Garlic
Add the sliced onions and minced garlic to the slow cooker around the pork chops.
Dot the pork chops with butter.
4. Make the Gravy
In a bowl, whisk together the chicken broth, cream of mushroom soup, and Worcestershire sauce until smooth.
Pour the mixture over the pork chops and onions.
5. Slow Cook
Cover and cook on:
- LOW for 4–5 hours, or
- HIGH for 2–3 hours
Cook until the pork is tender and reaches at least 145°F (63°C) internally, followed by a 3-minute rest.
Avoid significantly overcooking lean pork chops, as they can become dry.
6. Finish the Gravy
Once the pork is cooked, gently stir the gravy around the chops.
If the gravy is thinner than desired, transfer some of it to a saucepan and simmer for a few minutes until reduced.
7. Garnish and Serve
Spoon the creamy onion gravy over the pork chops.
Sprinkle with fresh parsley.
Serve with mashed potatoes, roasted vegetables, green beans, or buttered noodles.
Recipe Tips
- Bone-in chops with some marbling are less likely to dry out than very lean chops.
- Searing the pork first is optional but adds excellent color and flavor.
- Don’t overcrowd the skillet when searing.
- Check the thickest part of the pork with an instant-read thermometer rather than relying only on cooking time.
- Add sliced mushrooms for an extra savory variation.
- For a sweeter flavor, stir a teaspoon of honey into the gravy.
- Refrigerate leftovers in an airtight container for 3–4 days.
- Reheat gently with some gravy to help keep the pork moist.
