Ingredients
For the Steak Patties
- 1½ lb (680 g) ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup finely chopped onion
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
For the Mushroom Gravy
- 2 tablespoons butter
- 8 oz (225 g) mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- ½ cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- Salt, to taste
- 2 tablespoons chopped fresh parsley
Directions
1. Prepare the Patties
In a large bowl, combine the ground beef, breadcrumbs, egg, chopped onion, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
Mix gently until just combined.
Divide the mixture into 6 equal portions and shape each into an oval patty about ½–¾ inch thick.
2. Brown the Patties
Heat the olive oil in a large skillet over medium-high heat.
Add the patties and cook for about 3–4 minutes per side, until nicely browned.
They don’t need to be completely cooked through at this point.
Transfer the patties to a plate.
3. Cook the Mushrooms and Onions
Reduce the heat to medium.
Add the butter to the same skillet.
Add the sliced mushrooms and onions.
Cook for 6–8 minutes, stirring occasionally, until the mushrooms are browned and the onions are softened.
Add the minced garlic and cook for another 30 seconds.
4. Make the Gravy
Sprinkle the flour over the mushrooms and onions.
Stir for about 1 minute to cook the flour.
Slowly pour in the beef broth while stirring continuously.
Add the heavy cream, Worcestershire sauce, Dijon mustard, thyme, and black pepper.
Bring the gravy to a gentle simmer.
5. Return the Patties
Place the browned Salisbury steak patties back into the skillet.
Spoon some of the mushroom gravy over the top.
Cover and simmer over low heat for 10–15 minutes, until the patties are cooked through and reach 160°F (71°C) internally.
6. Finish the Gravy
Taste the gravy and adjust the seasoning as needed.
If the gravy is too thick, add a splash of beef broth.
If it’s too thin, simmer uncovered for a few additional minutes.
7. Serve
Garnish with fresh parsley.
