Runza Casserole
If you love the classic Runza—savory seasoned beef, tender cabbage, onions, and melty cheese wrapped in soft bread—this easy casserole gives you all those comforting flavors without having to make individual pockets. It’s hearty, cheesy, and perfect for a family dinner.
Ingredients
For the Filling
- 1½ pounds ground beef
- 1 medium yellow onion, finely chopped
- 5–6 cups finely shredded green cabbage
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon butter or olive oil
For the Casserole
- 2 tubes refrigerated crescent roll dough
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons melted butter
- ½ teaspoon Italian seasoning, optional
- 1 tablespoon sesame seeds, optional
Directions
1. Prepare the Beef
Preheat your oven to 375°F (190°C).
Heat a large skillet over medium-high heat. Add the ground beef and cook for about 6–8 minutes, breaking it apart with a spoon as it cooks.
Continue cooking until the beef is no longer pink. Drain excess grease if necessary.
2. Add the Onion and Garlic
Add the chopped onion and butter or olive oil to the skillet.
Cook for approximately 3–4 minutes, stirring occasionally, until the onion begins to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
3. Cook the Cabbage
Add the shredded cabbage to the skillet.
It may look like a lot at first, but cabbage cooks down considerably. Stir everything together and cook for approximately 7–10 minutes, or until the cabbage becomes tender.
Season with salt, pepper, paprika, onion powder, garlic powder, and Worcestershire sauce.
Taste the mixture and adjust the seasoning if needed.
4. Prepare the Bottom Crust
Lightly grease a 9×13-inch baking dish.
Unroll one tube of crescent roll dough and gently press the pieces together to create one layer. Place it across the bottom of the baking dish.
Don’t worry if there are a few small seams; just press them together gently with your fingers.
5. Add the Beef and Cabbage Filling
Spread the cooked beef and cabbage mixture evenly over the crescent dough.
Leave a small border around the edges if possible.
6. Add the Cheese
Sprinkle the cheddar and mozzarella evenly over the beef and cabbage mixture.
The combination of cheeses gives the casserole a creamy, gooey center while the cheddar provides the classic savory flavor.
7. Add the Top Crust
Unroll the second tube of crescent roll dough and carefully place it over the cheese.
Again, gently press the seams together.
Brush the top with melted butter and sprinkle with Italian seasoning or sesame seeds if desired.
8. Bake
Place the casserole in the preheated oven and bake for approximately 25–30 minutes, or until the top is puffed and deeply golden brown.
If the top begins browning too quickly while the center still needs more time, loosely cover the casserole with aluminum foil and continue baking.
9. Rest Before Serving
Remove the casserole from the oven and let it rest for approximately 5–10 minutes.
This allows the filling and melted cheese to settle, making the casserole easier to cut and serve.
Cut into squares and serve warm.
