Every slice is tender, cheesy, and packed with the familiar flavors of a classic cheesesteak.
Ingredients
For the Meatloaf
- 2 pounds ground beef
- 1 small yellow onion, finely diced
- 1 green bell pepper, finely diced
- 8 ounces mushrooms, finely chopped, optional
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- ½ cup milk
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 6–8 slices provolone cheese
For the Topping
- ½ cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon yellow mustard
Optional Garnish
- Chopped fresh parsley
- Extra shredded provolone
- Thinly sliced sautéed onions
Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease a 9×5-inch loaf pan.
You can also shape the meatloaf on a parchment-lined baking sheet if you prefer more caramelized edges.
2. Sauté the Vegetables
Heat a skillet over medium heat and add a small drizzle of oil.
Add the diced onion and bell pepper. Cook for approximately 4–5 minutes, stirring occasionally, until they begin to soften.
If using mushrooms, add them and continue cooking for another 3–4 minutes, until most of their moisture has evaporated.
Add the minced garlic and cook for another 30 seconds.
Remove the vegetables from the heat and allow them to cool slightly.
3. Prepare the Meatloaf Mixture
In a large bowl, combine the breadcrumbs and milk. Let them sit for about 2 minutes so the breadcrumbs absorb the milk.
Add the ground beef, eggs, Worcestershire sauce, ketchup, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
Add the cooled sautéed vegetables.
Gently mix everything together until just combined. Avoid overmixing because it can make the meatloaf tough.
4. Add the Cheesesteak Filling
Place about half of the meat mixture into the prepared loaf pan.
Press it down gently and create a shallow groove through the center.
Arrange the provolone cheese slices down the middle, leaving a little space around the edges.
Cover the cheese completely with the remaining meat mixture. Press the edges together firmly so the cheese stays sealed inside while baking.
5. Prepare the Glaze
In a small bowl, mix together the ketchup, Worcestershire sauce, brown sugar, and mustard.
Stir until smooth.
Spread approximately half of the glaze over the top of the meatloaf. Reserve the remaining glaze for later.
6. Bake
Place the meatloaf in the preheated oven and bake for approximately 50–65 minutes, depending on its size and shape.
After about 40 minutes, spread the remaining glaze over the top.
Continue baking until the center reaches 160°F (71°C).
If the top starts browning too quickly, loosely cover the meatloaf with foil for the remainder of the cooking time.
7. Add Extra Cheese
For an especially cheesy finish, sprinkle shredded provolone over the top during the final 5 minutes of baking.
Return the meatloaf to the oven until the cheese is melted and bubbly.
8. Rest Before Slicing
Remove the meatloaf from the oven and let it rest for 10–15 minutes before slicing.
This step is important because it allows the juices to redistribute and gives the melted cheese time to settle inside.
Slice into thick portions and garnish with fresh parsley if desired.
Tips for the Best Philly Cheesesteak Meatloaf
Don’t skip sautéing the vegetables. Cooking the onions, peppers, and mushrooms first develops their flavor and removes excess moisture that could make the meatloaf watery.
Use provolone for the classic cheesesteak flavor. You can substitute mozzarella, American cheese, or mild cheddar if preferred.
Don’t overmix the beef. Gently combining the ingredients keeps the meatloaf tender.
For even more cheesesteak flavor, add a few thinly sliced sautéed onions and peppers on top just before serving.
What to Serve With It
Serve this meatloaf with classic comfort-food sides such as:
- Creamy mashed potatoes
- Crispy roasted potatoes
- Garlic green beans
- Buttered corn
- Coleslaw
- Steamed broccoli
- Simple garden salad
For an extra indulgent meal, serve slices with additional melted provolone and a little sautéed onion and bell pepper on top.
Storage and Reheating
Store leftover meatloaf in an airtight container in the refrigerator for up to 3–4 days.
Individual slices can be reheated in the microwave, but reheating them gently in a covered skillet or oven helps preserve their moisture. You can also turn leftover slices into incredible cheesesteak-style sandwiches with toasted rolls and melted provolone.
