Pâté Chinois (Canadian Shepherd’s Pie)
Pâté Chinois is a beloved French-Canadian comfort food made with three simple layers: seasoned ground beef, sweet corn, and creamy mashed potatoes. It’s inexpensive, hearty, and wonderfully satisfying—a classic Quebec-style family dinner that’s easy to prepare.
Ingredients
For the Beef Layer
- 1½ lbs (680 g) ground beef
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon butter or vegetable oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 teaspoon Worcestershire sauce, optional
- ¼ cup beef broth, optional
For the Corn Layer
- 2 cups canned whole-kernel corn, drained
- 2 cups canned creamed corn
- ¼ teaspoon black pepper
- Pinch of salt, if needed
For the Mashed Potato Layer
- 2½ lbs (1.1 kg) potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup warm milk
- ½ teaspoon salt
- ¼ teaspoon black pepper

- ½ cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley
- Paprika for sprinkling
Directions
1. Prepare the Potatoes
Place the peeled and cubed potatoes in a large pot.
Cover with cold water and add a generous pinch of salt.
Bring to a boil and cook for approximately 15–20 minutes, or until the potatoes are fork-tender.
Drain thoroughly.
Return the potatoes to the warm pot and let them sit for about 1 minute to allow excess moisture to evaporate.
2. Make the Mashed Potatoes
Add the butter and warm milk.
Mash until smooth and creamy.
Season with salt and black pepper.
Don’t overmix, or the potatoes can become gummy.
Set aside.
3. Cook the Beef
Preheat your oven to 375°F (190°C).
Heat butter or oil in a large skillet over medium heat.
Add the diced onion and cook for 3–4 minutes, until softened.
Add the ground beef.
Cook for 7–9 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
Drain excess grease if necessary.
4. Season the Beef
Add garlic, salt, black pepper, paprika, and Worcestershire sauce.
Cook for another 1–2 minutes.
If the mixture seems dry, stir in a little beef broth.
Remove from the heat.
5. Assemble the Pâté Chinois
Lightly grease a 9 × 13-inch baking dish.
Spread the cooked ground beef evenly across the bottom.
Add the creamed corn over the beef.
Spread the whole-kernel corn evenly over the creamed corn.
Finally, spoon the mashed potatoes over the corn.
Use a spatula to spread the potatoes into an even layer.
6. Create a Golden Top
For a classic golden finish, run a fork gently across the surface of the mashed potatoes to create small ridges.
These ridges become beautifully browned during baking.
If desired, sprinkle a little paprika over the top.
7. Bake
Place the dish in the preheated oven.
Bake for approximately 30–35 minutes, until heated through and the potato topping is golden around the edges.
For extra browning, place it under the broiler for 1–2 minutes, watching carefully.
8. Rest and Serve
Remove from the oven and let it rest for 10 minutes before serving.
Spoon directly onto plates and enjoy warm.
Tips for the Best Pâté Chinois
Use creamy mashed potatoes: Yukon Gold potatoes work particularly well because they become naturally buttery and smooth.
Drain the beef well: Too much grease can make the bottom layer watery.
Don’t skip the creamed corn: It gives the dish its characteristic creamy middle layer.
Make ridges in the potatoes: They create extra crispy, golden edges.
Let it rest: Resting makes the layers easier to serve.
