Parmesan Baked Potatoes
These Parmesan Baked Potatoes are crispy on the outside, tender on the inside, and loaded with buttery garlic and Parmesan flavor. They make an easy side dish for chicken, steak, burgers, or roasted vegetables and require just a few simple ingredients.
Ingredients
- 1½ lbs baby potatoes or small Yukon Gold potatoes
- ½ cup grated Parmesan cheese
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Potatoes
Preheat your oven to 425°F (220°C).
Wash the potatoes thoroughly and cut them in half. If using larger potatoes, cut them into evenly sized pieces.
Pat them dry with a clean kitchen towel. Removing excess moisture helps them become crisp.
2. Prepare the Parmesan Mixture
In a small bowl, combine the grated Parmesan, melted butter, olive oil, minced garlic, Italian seasoning, paprika, black pepper, and salt.
Mix until well combined.
3. Coat the Potatoes
Spread the Parmesan mixture over the bottom of a large baking dish or rimmed baking sheet.
Place the potatoes cut-side down directly over the Parmesan mixture.
Press them down gently so the Parmesan mixture sticks to the cut surface.
4. Bake
Bake for 30–40 minutes, depending on the size of the potatoes, until they are tender in the center and the Parmesan has become golden and crisp.
For extra browning, turn the oven to broil for the final 1–2 minutes, watching carefully so the Parmesan doesn’t burn.
5. Serve
Remove the potatoes from the oven and allow them to cool for a few minutes.
Carefully lift them from the pan using a spatula, keeping the crispy Parmesan crust attached.
Sprinkle with fresh parsley and serve hot.
