These Ooey Gooey Butter Cake Bars are incredibly rich, buttery, soft, and sweet, with a slightly crisp golden crust and a luscious, creamy center. They’re easy to make and perfect for parties, holidays, or whenever you want an indulgent dessert.
🛒 Ingredients
For the Crust
- 1 box (15.25 oz / 432 g) yellow cake mix
- ½ cup (115 g) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Gooey Filling
- 225 g (8 oz) cream cheese, softened
- 2 large eggs
- ½ cup (115 g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 3½ cups (420 g) powdered sugar
- ¼ teaspoon salt
👩🍳 Instructions
1. Prepare the Pan
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking pan and line it with parchment paper, leaving some overhang on the sides. This makes the bars much easier to remove later.
2. Make the Crust
In a large bowl, combine the yellow cake mix, melted butter, egg, and vanilla.
Mix until a thick dough forms.
Press the mixture firmly and evenly into the bottom of the prepared pan.
Tip: Lightly grease your fingers or use the bottom of a measuring cup to make pressing the sticky dough easier.
3. Make the Gooey Filling
Beat the softened cream cheese until smooth and creamy.
Add the eggs, melted butter, and vanilla extract. Beat until completely combined.
Gradually add the powdered sugar and salt, mixing until smooth and thick.
The filling should be creamy and pourable but fairly thick.
4. Assemble
Pour the cream cheese mixture over the cake-mix crust.
Spread it gently with a spatula so it reaches all four corners.
🔥 5. Bake
Bake at 350°F (175°C) for approximately 35–40 minutes.
The edges should be golden and set, while the center should still look slightly soft and jiggly.
⚠️ Don’t overbake! The center will continue to firm up as the bars cool. Overbaking is the biggest mistake when making gooey butter bars.
❄️ 6. Cool Completely
Remove the pan from the oven and let the cake cool completely in the pan.
For cleaner slices, refrigerate it for 1–2 hours after cooling.
Lift it out using the parchment paper and cut into squares.
Dust the top with additional powdered sugar before serving.
✨ Tips for the Gooey Texture
- Use full-fat cream cheese for the richest filling.
- Make sure the cream cheese is properly softened before mixing.
- Don’t substitute cold butter.
- Take the bars out when the center is still slightly jiggly.
- Allow them to cool completely before cutting.
- For extra richness, add ½ cup white chocolate chips to the filling.
- For a buttery caramel flavor, add ½ teaspoon almond extract along with the vanilla.
