Ingredients
- 1½ lbs (680 g) ground beef, preferably 80/20
- 2 large yellow onions, very thinly sliced
- 6 hamburger buns
- 6 slices American cheese

- 1 tablespoon vegetable oil

Directions
1. Slice the Onions
Peel the onions and slice them as thinly as possible.
A mandoline makes this especially easy, but a sharp knife works too.
Separate the slices into loose strands.
2. Form the Beef Balls
Divide the ground beef into 6 equal portions.
Roll each portion loosely into a ball.
Don’t pack the meat too tightly.
3. Heat the Skillet
Heat a large cast-iron skillet or heavy frying pan over medium-high heat.
Add the butter and vegetable oil.
Once hot, add a generous handful of sliced onions for each burger.
4. Smash the Burgers
Place one beef ball directly on top of each pile of onions.
Immediately use a sturdy spatula to smash the beef very thin, pressing the onions into the meat.
Season with salt and black pepper.
Cook for approximately 2–3 minutes, until the bottom is deeply browned and crispy.
5. Flip
Scrape firmly underneath each burger with the spatula so you keep the crispy onion layer attached to the beef.
Flip the patties.
Cook for another 1–2 minutes.
Place a slice of American cheese on each patty during the final minute and allow it to melt.
For food safety, cook ground beef to 160°F (71°C).
6. Toast the Buns
While the burgers cook, lightly butter the cut sides of the buns.
Place them cut-side down in the skillet and toast until golden.
7. Assemble
Spread your favorite condiments over the toasted buns.
Place the cheesy onion burger on the bottom bun.
Add pickles or other toppings if desired.
Top with the other half of the bun.
Serve immediately.
