These No-Bake Chocolate Peanut Butter Crunch Bars are rich, creamy, crunchy, and incredibly easy to make. With layers of chocolate, peanut butter, and crispy cereal, they come together without turning on the oven and make a perfect quick dessert or snack.
Ingredients
For the Crunch Layer
- 3 cups crispy rice cereal
- 1 cup creamy peanut butter
- ½ cup honey
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Topping
- 1½ cups semi-sweet chocolate chips
- ½ cup creamy peanut butter
- 1 tablespoon coconut oil, optional
Directions
1. Prepare the Pan
Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
2. Make the Peanut Butter Mixture
Add the peanut butter, honey, and butter to a small saucepan.
Warm over low heat, stirring frequently, until melted and smooth.
Remove from the heat and stir in the vanilla and salt.
3. Add the Crunch
Place the crispy rice cereal in a large bowl.
Pour the warm peanut butter mixture over the cereal.
Gently fold until all the cereal is evenly coated without crushing it.
4. Press Into the Pan
Transfer the mixture to the prepared pan.
Press it down firmly and evenly using the back of a spatula or a piece of parchment paper.
5. Make the Chocolate Topping
Place the chocolate chips and peanut butter in a microwave-safe bowl.
Heat in 20–30 second intervals, stirring after each interval, until smooth and completely melted.
If desired, stir in the coconut oil for a smoother topping.
6. Add the Chocolate
Pour the melted chocolate mixture over the peanut butter crunch layer.
Spread evenly with a spatula.
7. Chill
Refrigerate for at least 2 hours, or until the bars are firm.
8. Slice and Serve
Lift the chilled bars from the pan using the parchment paper.
Cut into squares with a sharp knife.
Serve chilled or allow them to sit at room temperature for a few minutes before serving.
