Napoleon in a Glass is an elegant individual dessert inspired by the classic Napoleon pastry. Instead of assembling a large layered cake, crispy pastry is layered in individual glasses with a silky vanilla cream. The result is creamy, crunchy, delicate, and absolutely irresistible.

Ingredients
For the Pastry Layers
- 1 sheet puff pastry, thawed
- 2 tablespoons granulated sugar

For the Vanilla Cream
- 2 cups (480 ml) whole milk
- ½ cup (100 g) granulated sugar
- 3 large egg yolks
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- ½ cup (120 ml) heavy cream, chilled

Directions
1. Bake the Puff Pastry
Preheat your oven to 400°F (200°C).
Place the thawed puff pastry on a parchment-lined baking sheet.
Prick the pastry all over with a fork. This helps prevent it from puffing excessively.
Sprinkle lightly with granulated sugar.
Bake for approximately 15–20 minutes, or until golden brown and crisp.
Remove from the oven and allow it to cool completely.
Once cooled, break or cut the pastry into small pieces.
Don’t worry if the pieces aren’t perfectly shaped—the rustic layers look beautiful in a glass.
2. Prepare the Vanilla Cream
Pour the milk into a saucepan and heat over medium heat until hot but not boiling.
In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
Slowly pour about ½ cup of the hot milk into the egg mixture while whisking continuously.
This gently warms the eggs.
Pour the mixture back into the saucepan with the remaining milk.
Cook over medium-low heat, whisking constantly.
After several minutes, the mixture will thicken into a smooth custard.
Remove from the heat.
Add the vanilla and butter.
Whisk until completely smooth.
Transfer the custard to a clean bowl.
Cover the surface directly with plastic wrap to prevent a skin from forming.
Allow it to cool completely.
3. Whip the Cream
Place the cold heavy cream in a mixing bowl.
Beat until soft peaks form.
Once the custard is completely cool, gently fold the whipped cream into it.
The result should be light, silky, and creamy.
4. Assemble the Napoleon in Glasses
Choose small dessert glasses or clear cups.
Start with a layer of crushed puff pastry.
Add a layer of vanilla cream.
Add another layer of pastry.
Follow with another layer of cream.
Continue alternating until the glasses are nearly full.
Finish with a generous layer of crushed pastry on top.
5. Chill
Cover the glasses and refrigerate for at least 2 hours.
For a softer, more traditional Napoleon texture, refrigerate overnight.
The pastry will absorb some of the cream while still retaining a pleasant texture.
6. Decorate and Serve
Just before serving, dust the top with powdered sugar.
