Mini Crockpot Chicken and Stuffing
This 4-ingredient-style Crockpot Chicken and Stuffing is an incredibly easy comfort-food dinner. Tender chicken breasts are slowly cooked with creamy chicken soup, flavorful stuffing, and broth until everything is juicy, savory, and delicious. It requires very little preparation and makes a cozy family meal.
Ingredients
- 4 skinless, boneless chicken breasts
- 1 cup chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 box (about 6 oz) stuffing mix
- ½ cup water
How to Make It
1. Prepare the Crockpot
Lightly grease a 5–6-quart slow cooker with cooking spray or a little oil.
If you’re using a mini slow cooker, make sure it is large enough to comfortably hold the four chicken breasts and stuffing mixture without being overfilled.
2. Add the Chicken
Place the chicken breasts in the bottom of the slow cooker.
If the breasts are very thick, gently pound them to a more even thickness so they cook more evenly.
3. Make the Creamy Mixture
In a bowl, whisk together:
- Chicken broth
- Cream of chicken soup
- ½ cup water
Mix until mostly smooth.
4. Add the Stuffing
Pour the stuffing mix into a large bowl.
Pour the soup mixture over the stuffing and stir gently until the stuffing is evenly moistened.
Don’t let it sit too long before adding it to the slow cooker, because the stuffing will continue absorbing liquid as it cooks.
5. Layer Everything
Spoon the prepared stuffing mixture evenly over the chicken breasts.
Spread it gently with a spoon so the chicken is covered.
6. Slow Cook
Cover with the lid and cook on:
LOW: 4–5 hours
HIGH: 2–3 hours
Cooking time depends on the thickness of the chicken breasts and your slow cooker.
The chicken should reach an internal temperature of 165°F (74°C) in the thickest part.
7. Check the Stuffing
Once the chicken is cooked through, check the stuffing.
It should be soft, moist, and flavorful.
If the top looks a little dry, spoon some of the cooking juices over it and let it cook for another 10–15 minutes.
8. Serve
Carefully remove the chicken and let it rest for about 5 minutes.
Serve each chicken breast with a generous spoonful of the creamy stuffing.
For a complete dinner, serve with green beans, roasted carrots, broccoli, or a simple side salad.
Optional Additions
Although the basic recipe is delicious with just the listed ingredients, you can add:
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon poultry seasoning
- ½ cup diced celery
- ½ cup diced onion
- 1 cup sliced mushrooms
Tips for the Best Chicken and Stuffing
Don’t overcook the chicken: Boneless chicken breasts can become dry if left in the slow cooker too long.
Use chicken thighs: Boneless, skinless thighs are more forgiving and stay particularly juicy.
Don’t stir repeatedly: Once the stuffing is layered over the chicken, keep the lid closed while cooking.
Check the temperature: A meat thermometer is the most reliable way to know when the chicken is safely cooked.
Let it rest: A few minutes of resting helps the chicken retain its juices.
Storage
Place leftovers in an airtight container and refrigerate within 2 hours of cooking.
Store for up to 3–4 days.
Reheat thoroughly before serving.
