Ingredients
- 1 lb ground beef or ground chicken

Directions
1. Cook the Meat
Heat the olive oil in a large skillet over medium-high heat.

2. Add the Seasonings

Cook for another 1 minute, until fragrant.
3. Add the Vegetables
Stir in the black beans, corn, and diced tomatoes.
Cook for 4–5 minutes, allowing the flavors to combine.
4. Add the Rice
Fold in the cooked rice and stir until everything is evenly combined.
Cook for another 2–3 minutes, until heated through.
5. Add the Cheese
Sprinkle the shredded cheese over the top.
Cover the skillet and cook for 2–3 minutes, until the cheese melts.
6. Serve
Garnish with fresh cilantro if desired.
