Ingredients
For the Salad
- 12 oz (340 g) rotini or bow-tie pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup frozen peas, thawed
- 1 cup bell pepper, diced
- ½ cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- ½ cup sliced black olives
- ¼ cup chopped fresh parsley
For the Creamy Dressing
- 1 cup mayonnaise
- ½ cup sour cream
- 2 tablespoons ranch seasoning
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1–2 tablespoons milk, as needed
Directions
1. Cook the Pasta
Bring a large pot of salted water to a boil.
Add the pasta and cook according to the package directions until al dente.
Drain and rinse under cold water to stop the cooking process.
Allow the pasta to drain thoroughly.
2. Prepare the Dressing
In a medium bowl, combine the mayonnaise, sour cream, ranch seasoning, lemon juice, garlic powder, and black pepper.
Whisk until smooth.
If the dressing is too thick, add 1–2 tablespoons of milk until it reaches a creamy, pourable consistency.
3. Start the Layers
Use a large clear serving bowl or trifle dish.
Place the cooled pasta in an even layer at the bottom.
4. Add the Vegetables
Layer the peas, bell pepper, cucumber, tomatoes, red onion, and black olives evenly over the pasta.
Try to keep each layer distinct for a beautiful presentation.
5. Add the Cheese
Sprinkle the shredded cheddar cheese evenly over the vegetables.
6. Add the Dressing
Spread the creamy dressing gently over the top, covering the salad as evenly as possible.
This helps seal the layers and keeps the vegetables fresh.
7. Chill
Cover the bowl and refrigerate for at least 1–2 hours before serving.
For the best flavor, you can prepare it several hours ahead.
8. Garnish and Serve
Just before serving, sprinkle fresh parsley over the top.
Serve chilled and gently toss the layers together at the table, or scoop from the bottom so each serving includes every layer.
Recipe Tips
- Don’t overcook the pasta; slightly firm pasta holds up better in a layered salad.
- Cool the pasta completely before assembling.
- Pat watery vegetables such as cucumber and tomatoes dry to prevent excess liquid.
- You can add diced ham, cooked bacon, grilled chicken, or hard-boiled eggs for extra protein.
- Swap cheddar for mozzarella, Colby Jack, or Monterey Jack.
- Prepare the salad several hours ahead so the flavors have time to develop.
- Keep the salad refrigerated and don’t leave it at room temperature for extended periods.
