Ingredients
For the Chocolate Cake
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- ⅓ cup unsweetened cocoa powder
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup buttermilk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup hot coffee or hot water

- ¾ cup granulated sugar
- 4 tablespoons unsalted butter
- ½ cup heavy cream
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
For the Chocolate Mousse
- 8 oz (225 g) semi-sweet chocolate, finely chopped
- 1½ cups heavy cream, divided
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Ganache
- 4 oz (115 g) semi-sweet or dark chocolate, chopped
- ½ cup heavy cream

Directions
1. Prepare the Cake
Preheat the oven to 350°F (175°C).
Grease and line the bottom of a 9-inch springform pan with parchment paper.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the egg, buttermilk, vegetable oil, and vanilla. Whisk until the batter is smooth.
Slowly pour in the hot coffee or hot water while stirring. The batter will be relatively thin—this is normal.
Pour the batter into the prepared pan.
Bake for approximately 22–28 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
Allow the cake to cool completely.
2. Make the Caramel
Place the sugar in a heavy-bottomed saucepan over medium heat.
Allow it to melt gradually, gently swirling the pan occasionally. Don’t stir aggressively while the sugar is melting.
Once the sugar has turned a deep amber color, carefully add the butter.
The mixture will bubble vigorously.
Slowly pour in the heavy cream while whisking continuously. Be extremely careful because the caramel will be very hot and will bubble significantly.
Add the salt and vanilla.
Continue cooking for approximately 1–2 minutes, until smooth.
Remove from the heat and allow the caramel to cool until thick but still spreadable.
3. Make the Chocolate Mousse
Place the chopped chocolate in a heatproof bowl.
Heat ½ cup of the heavy cream until steaming but not boiling.
Pour the hot cream over the chocolate and let it sit for 2 minutes.
Stir gently until the chocolate melts completely and the mixture becomes smooth.
Allow the chocolate mixture to cool until it is slightly warm or close to room temperature.
In another bowl, whip the remaining 1 cup heavy cream with powdered sugar and vanilla until soft peaks form.
Gently fold the whipped cream into the cooled chocolate mixture in two or three additions.
Fold carefully to keep the mousse light and airy.
4. Assemble the Cake
Make sure the chocolate cake is completely cool.
Leave it in the springform pan.
Spread the cooled caramel evenly over the cake, leaving a small border around the edge.
Refrigerate for approximately 15–20 minutes to allow the caramel to firm slightly.
Spread the chocolate mousse evenly over the caramel layer.
Smooth the top with an offset spatula.
5. Chill
Cover the cake and refrigerate for at least 4–6 hours, preferably overnight.
The mousse needs enough time to set firmly before the cake is removed from the pan.
6. Make the Ganache
Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream until just steaming.
Pour it over the chocolate and let it stand for 2 minutes.
Stir slowly until completely smooth and glossy.
Allow the ganache to cool for several minutes so it thickens slightly but remains pourable.
7. Finish the Cake
Carefully remove the chilled cake from the springform pan.
Pour the ganache over the top and gently spread it toward the edges.
Let a few drips run down the sides for a dramatic finish.
Drizzle with additional caramel sauce and sprinkle with a small amount of flaky sea salt if desired.
Decorate with chocolate curls, whipped cream, or toasted pecans.
8. Slice and Serve
For clean slices, use a sharp knife dipped in hot water and wiped dry between cuts.
Serve the cake chilled or allow it to sit at room temperature for about 10–15 minutes before serving for a softer mousse texture.
Tips for the Best Mousse Cake
Cool every layer before assembling. Warm caramel or cake can melt the mousse.
Don’t overwhip the cream. Stop at soft-to-medium peaks so the mousse remains smooth rather than grainy.
Use good-quality chocolate. Since chocolate is a major component, better chocolate will noticeably improve the flavor.
Chill overnight when possible. This gives the layers plenty of time to firm up and makes slicing much easier.
