Ingredients
For the Vegetable Soup
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 2 medium potatoes, peeled and diced
- 1 zucchini, chopped
- 1 cup green beans, cut into pieces

Instructions
1. Start the Soup
Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for 4–5 minutes, stirring occasionally, until the vegetables begin to soften.
Add the garlic and cook for another 30 seconds.
2. Add the Vegetables and Broth
Stir in the potatoes, zucchini, green beans, diced tomatoes, vegetable broth, Italian seasoning, thyme, black pepper, and a little salt.
Bring the soup to a gentle boil, then reduce the heat and cover.

3. Finish the Soup

Spread butter evenly on one side of each slice of bread.
