Homemade English Muffins
Soft, chewy, and lightly crisp on the outside, these homemade English muffins are perfect for breakfast. They’re delicious toasted and served with butter, jam, honey, or your favorite breakfast toppings.
🥯 Ingredients
- 3 cups (375 g) all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 2¼ teaspoons (1 packet) active dry yeast
- 1 cup (240 ml) warm milk
- 2 tablespoons melted butter
- 1 large egg
- Cornmeal, for dusting
👩🍳 Instructions
1. Activate the Yeast
Warm the milk until it is comfortably warm, not hot.
Add the yeast and sugar. Stir gently and let it sit for 5–10 minutes, until foamy.
2. Make the Dough
In a large bowl, combine the flour and salt.
Add the yeast mixture, melted butter, and egg.
Mix until a soft dough forms.
Turn the dough onto a lightly floured surface and knead for about 6–8 minutes, until smooth and elastic.
3. Let the Dough Rise
Place the dough in a lightly greased bowl and cover with a clean kitchen towel or plastic wrap.
Let it rise in a warm place for 1–1½ hours, or until doubled in size.
4. Shape the Muffins
Gently punch down the dough and transfer it to a lightly floured surface.
Roll it out to about ½-inch thick.
Using a round cutter or drinking glass, cut out circles about 3–4 inches wide.
Sprinkle a baking sheet generously with cornmeal and place the dough rounds on it. Sprinkle the tops lightly with more cornmeal.
Cover and let them rest for another 20–30 minutes.
5. Cook the English Muffins
Heat a large skillet or griddle over low to medium-low heat.
Lightly grease the surface.
Place the muffins in the skillet, leaving space between them.
Cook for approximately 5–7 minutes per side, until golden brown and cooked through.
Keep the heat moderate. If the outside browns too quickly, lower the heat so the centers have time to cook.
6. Cool and Serve
Transfer the English muffins to a wire rack and allow them to cool for at least 10 minutes.
For the classic texture, use a fork to gently split them around the middle rather than cutting them completely with a knife.
Toast and serve with butter, jam, honey, cream cheese, or eggs.
⭐ Tips for Perfect English Muffins
- Keep the skillet temperature fairly low so the centers cook without burning the outside.
- Don’t make the dough rounds too thin; they should have a nice, thick interior.
- Cornmeal helps create the classic slightly gritty exterior.
- Use a fork to split the muffins to preserve their characteristic nooks and crannies.
- Allow them to cool before splitting for the best texture.
