Heavenly Fried Rice Delight
This Heavenly Fried Rice Delight is packed with fluffy rice, crisp vegetables, scrambled eggs, and savory seasonings. Everything comes together in one hot skillet for a delicious homemade meal with plenty of flavor and texture.
Ingredients
- 4 cups cooked and chilled long-grain white rice
- 2 tablespoons vegetable oil
- 2 large eggs, lightly beaten
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables, such as peas, carrots, and corn
- ½ cup chopped green onions
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce, optional
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- ½ cup cooked chicken, shrimp, or beef, optional
Instructions
1. Prepare the Rice
For the best texture, use cooked rice that has been chilled in the refrigerator. Cold rice separates more easily and produces fried rice that isn’t mushy.
Break up any large clumps before cooking.
2. Cook the Eggs
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Pour in the beaten eggs and gently scramble until just cooked. Remove the eggs from the pan and set aside.
3. Sauté the Aromatics and Vegetables
Add the remaining oil to the same pan.
Add the diced onion and cook for 2–3 minutes until softened. Add the garlic and cook for about 30 seconds.
Stir in the mixed vegetables and cook for another 2–3 minutes until heated through but still slightly crisp.
4. Add the Rice
Increase the heat to high and add the chilled rice.
Toss and stir-fry for 3–5 minutes, breaking up any remaining clumps and allowing the rice to become hot and lightly toasted.
5. Season the Fried Rice
Add the soy sauce, oyster sauce if using, sesame oil, and black pepper.
Toss everything together until the rice is evenly coated.
Return the scrambled eggs to the pan along with the cooked chicken, shrimp, or beef if using.
Stir-fry for another 1–2 minutes.
6. Finish and Serve
Add the chopped green onions and toss everything together.
Taste and adjust the seasoning if needed.
Serve immediately while hot.
Tips for Perfect Fried Rice
- Use cold, day-old rice whenever possible. Freshly cooked rice contains more moisture and can become soft or sticky.
- Cook over high heat to give the rice a lightly toasted, restaurant-style flavor.
- Don’t overcrowd the pan. If making a large batch, cook it in portions.
- Add soy sauce gradually so the fried rice doesn’t become too salty.

For a heartier meal, add diced chicken, shrimp, beef, or tofu. You can also add mushrooms, bell peppers, cabbage, or broccoli for extra vegetables.
For a simple vegetarian fried rice, leave out the meat and add extra vegetables.
Storage
Allow leftovers to cool promptly and refrigerate them in an airtight container. Enjoy within 3–4 days and reheat thoroughly before serving.
