Golden-Brown Strawberry Cream Cheese Roll-Ups
These Golden-Brown Strawberry Cream Cheese Roll-Ups are a delicious combination of crispy, buttery bread, sweet cream cheese, and juicy fresh strawberries. Each roll-up is cooked until beautifully golden on the outside while staying soft, creamy, and fruity in the center. They’re quick enough for a weekday breakfast but special enough for brunch, parties, or dessert.
Ingredients
For the Roll-Ups
- 8 slices soft white sandwich bread
- 4 oz (115 g) cream cheese, softened to room temperature
- 3 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- ½ cup fresh strawberries, finely diced
- 2 tablespoons strawberry jam, optional
- 3 tablespoons butter, melted
For the Cinnamon-Sugar Coating
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Optional Toppings
- Powdered sugar
- Whipped cream
- Extra sliced strawberries
- Strawberry sauce
- Maple syrup
- Melted white or milk chocolate
Instructions
1. Prepare the Strawberries
Wash the strawberries thoroughly and remove the green tops. Pat them completely dry with paper towels. Finely dice the strawberries into small pieces.
It’s important not to use strawberries that are overly wet because excess moisture can make the bread soggy and cause the filling to leak during cooking.
2. Make the Cream Cheese Filling
Place the softened cream cheese in a mixing bowl. Add the powdered sugar and vanilla extract.
Beat with a spoon, hand mixer, or spatula until the mixture becomes smooth, creamy, and easy to spread.
If you’re using strawberry jam, you can either mix it directly into the cream cheese or reserve it for spreading onto the bread.
3. Flatten the Bread
Place each slice of bread on a clean cutting board and remove all four crusts.
Using a rolling pin, gently flatten each slice until it becomes thin and flexible. Don’t press so hard that the bread tears.
Flattening the bread helps it roll tightly and gives the finished roll-ups a crispier texture.
4. Fill the Bread
Spread approximately 1 tablespoon of the cream cheese mixture evenly over each flattened slice.
If desired, spread a very thin layer of strawberry jam over the cream cheese.
Place a small amount of diced strawberries in a line near one edge of the bread. Avoid adding too many strawberries because the roll-ups can become difficult to seal.
5. Roll Them Up
Starting from the edge containing the strawberries, carefully roll the bread into a tight cylinder.
Try to keep the roll firm without squeezing the filling out.
Place each completed roll-up seam-side down while you prepare the remaining pieces.
6. Prepare the Cinnamon Sugar
In a shallow bowl, combine the granulated sugar and cinnamon.
Mix thoroughly so the cinnamon is evenly distributed throughout the sugar.
7. Coat the Roll-Ups
Brush each roll-up lightly with melted butter, making sure to cover all sides.
Immediately roll each one in the cinnamon-sugar mixture. The butter helps the sugar stick to the bread while also creating a beautifully crisp, golden exterior during cooking.
8. Cook Until Golden Brown
Heat a large nonstick skillet over medium heat.
Place the roll-ups in the skillet with the seam-side down first. Cook for about 1–2 minutes per side, gently turning them with tongs or a spatula.
Continue turning until all sides are golden brown and crisp. The entire cooking process should take approximately 5–7 minutes.
Keep the heat moderate. If the skillet is too hot, the outside can burn before the bread becomes properly crisp.
9. Cool Slightly and Serve
Transfer the finished roll-ups to a plate and allow them to cool for 2–3 minutes.
Serve them warm with powdered sugar, fresh strawberries, whipped cream, or strawberry sauce.
Air Fryer Method
You can also make these roll-ups in an air fryer.
- Preheat the air fryer to 375°F (190°C).
- Prepare the roll-ups according to the instructions above.
- Lightly brush them with melted butter.
- Arrange them in the air-fryer basket in a single layer.
- Cook for approximately 6–8 minutes, turning halfway through.
- Remove when they’re crisp and golden brown.
Cooking times can vary depending on your air fryer, so keep an eye on them toward the end.
Tips for Perfect Strawberry Roll-Ups
Use softened cream cheese: Cold cream cheese is difficult to spread and can tear the flattened bread.
Don’t overfill: A thin layer of filling works better than a thick one. Too much cream cheese or strawberry can cause the roll-ups to burst.
Dry the strawberries: Fresh strawberries contain plenty of moisture. Patting them dry helps prevent soggy bread.
Roll tightly: A firm roll gives you a better shape and helps prevent the filling from escaping.
Cook over medium heat: This allows the bread to become crisp and golden without burning the cinnamon-sugar coating.
Serve fresh: These roll-ups taste best shortly after cooking, when the outside is crisp and the center is warm and creamy.
Delicious Variations
Strawberry Cheesecake Roll-Ups
Add a few crushed graham crackers to the cream cheese filling for a cheesecake-inspired flavor.
Chocolate Strawberry Roll-Ups
Add a few mini chocolate chips to the filling before rolling.
Nutella Strawberry Roll-Ups
Spread a very thin layer of chocolate-hazelnut spread underneath the cream cheese.
Blueberry Cream Cheese Roll-Ups
Replace the strawberries with finely chopped blueberries for a different fruity version.
Mixed Berry Roll-Ups
Combine finely chopped strawberries, raspberries, and blueberries for a colorful mixed-berry filling.
How to Store Them
These roll-ups are best eaten fresh because the bread gradually loses its crisp texture.
If you have leftovers, place them in an airtight container and refrigerate for up to 2 days. Reheat them in an air fryer or skillet for a few minutes to help restore some of their crispness.
Avoid adding powdered sugar or fresh toppings until you’re ready to serve.
