German Chocolate Cheesecake
A rich, creamy cheesecake inspired by classic German chocolate cake, with a chocolate cookie crust, smooth chocolate cheesecake filling, and a decadent coconut-pecan topping.
Ingredients
For the Crust
- 2 cups chocolate cookie crumbs
- 5 tablespoons melted butter
- 2 tablespoons granulated sugar
For the Cheesecake
- 24 oz (680 g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 8 oz semi-sweet chocolate, melted and slightly cooled
- ½ cup sour cream
- ¼ cup heavy cream
For the Coconut-Pecan Topping
- ½ cup evaporated milk
- ½ cup brown sugar
- 3 egg yolks
- 4 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup shredded sweetened coconut
- ¾ cup chopped pecans
Directions
- Prepare the crust: Preheat the oven to 350°F (175°C). Mix the cookie crumbs, melted butter, and sugar until evenly combined. Press firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then let cool.
- Make the filling: Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing just until incorporated.
- Add the vanilla, melted chocolate, sour cream, and heavy cream. Mix until smooth, but avoid overmixing.
- Pour the cheesecake mixture over the cooled crust. Reduce the oven temperature to 325°F (165°C) and bake for approximately 55–70 minutes, until the edges are set while the center still has a slight wobble.
- Turn off the oven, crack the door open, and leave the cheesecake inside for about 30 minutes. Remove and cool completely.
- Make the topping: In a saucepan, whisk together evaporated milk, brown sugar, and egg yolks. Add the butter and cook over medium-low heat, stirring constantly, until thickened, about 8–10 minutes.
- Remove from the heat and stir in vanilla, coconut, and pecans. Allow the topping to cool until spreadable.
- Spread the coconut-pecan mixture over the chilled cheesecake.
- Refrigerate for at least 4 hours, preferably overnight, before slicing.
Serving
For an extra-decadent finish, drizzle each slice with melted chocolate and add a few toasted pecans. Keep the cheesecake refrigerated and serve chilled.
