Garlic Herb Grilled Octopus

Ingredients
- 2 lb (900 g) cleaned octopus
- 4 cloves garlic, minced
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh oregano
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- ½ teaspoon salt

Directions
1. Tenderize the Octopus
Place the cleaned octopus in a large pot and cover it with water.
Bring the water to a gentle simmer, then reduce the heat and cook for approximately 45–60 minutes, or until the thickest part of the tentacles can be easily pierced with a fork.
Cooking time can vary depending on the size of the octopus.
2. Drain and Cool
Carefully remove the octopus from the pot and drain well.
Allow it to cool enough to handle.
Pat the tentacles thoroughly dry with paper towels. Drying the octopus helps it develop better char on the grill.
3. Make the Garlic Herb Marinade
In a bowl, combine the olive oil, minced garlic, lemon juice, parsley, oregano, thyme, smoked paprika, salt, and black pepper.
Whisk until well combined.
4. Marinate
Cut the octopus into large tentacle pieces if necessary.
