Ingredients
For the Steak Bites
- 1½ pounds sirloin steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Worcestershire sauce, optional
For the Mashed Potatoes
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons unsalted butter
- ½ cup warm milk
- ¼ cup heavy cream, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cloves roasted or minced garlic, optional
Directions
1. Prepare the Potatoes
Place the peeled and chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
Bring the water to a boil, then reduce the heat slightly and cook for 15–20 minutes, or until the potatoes are completely tender when pierced with a fork.
Drain the potatoes thoroughly and return them to the warm pot.
2. Make the Mashed Potatoes
Add the butter to the hot potatoes and mash until smooth.
Gradually pour in the warm milk and heavy cream, stirring until the potatoes reach your desired consistency. Season with salt and black pepper.
For extra flavor, mix in roasted garlic or a little freshly minced garlic.
Keep the mashed potatoes warm while you prepare the steak.
3. Prepare the Steak
Pat the steak cubes very dry with paper towels. Removing excess moisture helps the steak develop a beautiful brown crust instead of steaming in the pan.
Season the steak with salt, black pepper, Italian seasoning, and smoked paprika.
4. Sear the Steak Bites
Heat a large skillet over medium-high to high heat. Add the olive oil and allow it to become hot.
Place the steak pieces in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
Sear the steak for approximately 2–3 minutes per side, depending on the size of the pieces and your preferred doneness.
Transfer the cooked steak bites to a plate.
5. Make the Garlic Butter Sauce
Reduce the heat to medium. Add the butter to the same skillet.
Once melted, add the minced garlic and cook for approximately 30–60 seconds, stirring constantly. Be careful not to burn the garlic.
Add the Worcestershire sauce if using and stir to combine.
6. Coat the Steak
Return the steak bites to the skillet and toss them thoroughly in the garlic butter.
Cook for another 1–2 minutes, allowing the buttery sauce to coat every piece of steak.
Sprinkle with freshly chopped parsley.
7. Serve
Spoon a generous portion of creamy mashed potatoes onto each plate. Top with the hot garlic butter steak bites and drizzle any remaining garlic butter from the skillet over the potatoes.
Garnish with additional parsley and freshly cracked black pepper.
Tips for Perfect Steak Bites
For juicy steak bites, avoid cooking the meat straight from a wet marinade. Patting the steak dry is one of the easiest ways to achieve better browning.
Sirloin is an excellent choice because it is flavorful and relatively tender, but ribeye can be used if you want a richer result. Cut the steak into similarly sized pieces so they cook evenly.
Don’t overcrowd the skillet. Too many steak pieces at once can lower the pan temperature and prevent proper searing.
For exceptionally creamy mashed potatoes, use Yukon Gold potatoes and add the milk gradually. Always use warm milk rather than cold milk, which can cool the potatoes and make them less smooth.
