Ingredients
- 1½ lb (680 g) sirloin steak, cut into bite-sized pieces
- 1½ lb baby potatoes, quartered
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes, optional
- ½ cup beef broth
- 2 tablespoons chopped fresh parsley
- ¼ cup grated Parmesan cheese, optional
Directions
1. Prepare the Potatoes
Wash and quarter the baby potatoes.
Place them in a microwave-safe bowl with a splash of water and microwave for 4–5 minutes, just until they begin to soften.
Drain well and pat dry.
2. Season the Steak
Place the steak pieces in a bowl.
Add the smoked paprika, Italian seasoning, salt, and black pepper.
Toss until evenly coated.
3. Crisp the Potatoes
Heat a large heavy skillet over medium-high heat.
Add the olive oil and 2 tablespoons of butter.
Add the potatoes in a single layer.
Cook for 8–10 minutes, turning occasionally, until golden brown and crisp on the outside.
Transfer the potatoes to a plate.
4. Sear the Steak
Add the steak pieces to the same skillet.
Cook for approximately 2–3 minutes per side, depending on the size of the pieces and your preferred doneness.
Avoid overcrowding the skillet so the steak browns properly.
Transfer the steak to a plate.
5. Make the Garlic Butter
Reduce the heat to medium.
Add the remaining butter and minced garlic to the skillet.
Cook for 30–60 seconds, stirring constantly, until fragrant.
Add the red pepper flakes if using.
6. Combine Everything
Return the potatoes and steak to the skillet.
Pour in the beef broth and toss everything together.
Cook for 2–3 minutes, allowing the broth and garlic butter to coat the steak and potatoes.
For food safety, steak should reach your preferred safe internal temperature.
7. Garnish and Serve
Remove from the heat.
Sprinkle with fresh parsley and Parmesan cheese if desired.
