Ingredients
For the Salad
- 6 cups mixed salad greens
- 4 large eggs
- 1 cup sweet corn, cooked and drained
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- ½ avocado, diced
- ¼ cup shredded cheddar cheese, optional
- 2 tablespoons chopped fresh parsley or cilantro
- Salt and black pepper, to taste
For the Dressing
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 small garlic clove, finely minced
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
1. Boil the Eggs
Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil, then reduce the heat slightly and cook for about 9–11 minutes.
Transfer the eggs to a bowl of ice water and let them cool for several minutes.
Peel and slice or quarter the eggs.
2. Prepare the Vegetables
Wash and dry the mixed greens thoroughly.
Add the greens, sweet corn, cucumber, cherry tomatoes, red onion, avocado, and fresh herbs to a large salad bowl.
3. Make the Dressing
In a small bowl or jar, combine the olive oil, lemon juice, apple cider vinegar, honey, Dijon mustard, garlic, salt, and black pepper.
Whisk or shake until the dressing is well combined.
Taste and adjust the seasoning if needed.
4. Assemble the Salad
Add the sliced boiled eggs to the salad.
Sprinkle with shredded cheddar cheese if using.
Drizzle the dressing over the salad just before serving.
5. Toss Gently
Use salad tongs to gently toss everything together, being careful not to break up the eggs or avocado too much.
Serve immediately.
Tips for the Best Salad
- Dry the greens well so the dressing coats them instead of sliding off.
- Use eggs that are fully chilled before slicing for cleaner pieces.
- Add the avocado just before serving to keep it fresh.
- Don’t dress the entire salad too early, especially if you expect leftovers.
- For extra crunch, add sunflower seeds, pumpkin seeds, or toasted nuts.
Easy Variations
Add Chicken
Top with grilled or shredded chicken for a more filling meal.

Make It Creamy
Replace the vinaigrette with a creamy ranch, yogurt, or honey-mustard dressing.
Add More Vegetables
Try shredded carrots, bell peppers, radishes, cabbage, or sliced celery.

You can prepare the boiled eggs, vegetables, and dressing ahead of time and store them separately in the refrigerator.
