- 1 teaspoon lemon juice
- 1 tablespoon olive oil
For the Potatoes

- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
For the Tomato Sauce
- 1 cup tomato sauce
- 1 tablespoon chopped parsley
- ½ teaspoon dried oregano
- 1 clove garlic, minced
- ¼ teaspoon black pepper
For the Béchamel Sauce
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- ½ teaspoon garlic powder
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Topping
- 1 cup shredded mozzarella
- ½ cup shredded cheddar or Gruyère
- 1 tablespoon chopped fresh parsley
Directions
1. Prepare the Potatoes
Preheat your oven to 375°F (190°C).
Peel the potatoes and slice them into thin rounds, approximately ¼ inch (6 mm) thick.
Place them in a bowl and toss with olive oil, salt, pepper, and paprika.
Set aside.
Tip: Keep the slices fairly thin and even so they cook at the same rate as the meatballs.
2. Make the Meatballs
Add the ground beef, onion, egg, breadcrumbs, garlic, parsley, oregano, paprika, salt, pepper, and lemon juice to a large bowl.
Mix gently with your hands until just combined.
Don’t overwork the meat mixture or the meatballs can become dense.
Shape into approximately 18–20 small meatballs.
3. Brown the Meatballs
Heat olive oil in a large skillet over medium-high heat.
Add the meatballs in batches if necessary.
Brown them for approximately 2–3 minutes per side.
They don’t need to be completely cooked at this stage because they will finish cooking in the oven.
Transfer them to a plate.
4. Prepare the Tomato Sauce
In a small bowl, combine:
- Tomato sauce
- Garlic
- Oregano
- Parsley
- Black pepper
Mix well.
Set aside.
5. Make the Béchamel
Melt the butter in a saucepan over medium heat.
Add the flour and whisk continuously for about 1–2 minutes.
Gradually pour in the milk while whisking constantly.
Continue cooking for approximately 4–6 minutes, until the sauce thickens.
Add the garlic powder, nutmeg, salt, and pepper.
Remove from the heat.
The béchamel should be creamy and thick enough to coat the back of a spoon.
6. Assemble the Bake
Lightly grease a 9×13-inch baking dish or similar oven-safe casserole dish.
Arrange a layer of sliced potatoes across the bottom.
Place the browned meatballs over the potatoes.
For a beautiful presentation, you can alternate potatoes and meatballs around the outside of the dish, as is done in similar potato-meatball bakes.
Pour the tomato sauce over the meatballs.
Then spoon the béchamel evenly over the potatoes and meatballs.
7. Add the Cheese
Sprinkle the mozzarella and cheddar or Gruyère evenly over the top.
Finish with a little chopped parsley.
8. Bake
Cover the dish loosely with aluminum foil.
Bake for 30 minutes.
Remove the foil and continue baking for another 20–25 minutes, or until:
- The potatoes are tender.
- The meatballs are completely cooked.
- The sauce is bubbling.
- The cheese is golden brown.
Similar versions bake around 45–50 minutes at 375°F until the potatoes are tender and the sauces are bubbling.
For food safety, the meatballs should reach 160°F (71°C) internally when made with ground beef.
9. Rest Before Serving
Remove the casserole from the oven.
Allow it to rest for 10–15 minutes.
This gives the sauces time to settle and makes the bake much easier to serve.
Sprinkle with fresh parsley and serve warm.
Dos and Don’ts
Do ✅
- Do slice the potatoes evenly.
- Do brown the meatballs before baking.
- Do keep the béchamel smooth by whisking constantly.
- Do cover the dish initially so the potatoes cook properly.
- Do uncover near the end for a golden cheesy top.
- Do let the casserole rest before serving.
Don’t ❌
- Don’t cut the potatoes too thick.
- Don’t overmix the meatball mixture.
- Don’t make the béchamel extremely thick.
- Don’t overcrowd the skillet when browning the meatballs.
- Don’t serve immediately after removing it from the oven—the sauce will be extremely hot.
Tips for the Best Potato Meatball Bake
🧀 Use Gruyère
For a more traditionally French-inspired flavor, replace the cheddar with Gruyère. It melts beautifully and gives the casserole a richer, nuttier taste.
🥔 Use Waxy Potatoes
Yukon Gold or other semi-waxy potatoes work particularly well because they hold their shape during baking.
🧄 Make the Sauce More Flavorful
Add a small amount of Dijon mustard to the béchamel for extra depth.
🌿 Fresh Herbs
Finish the dish with fresh parsley, thyme, or chives just before serving.
🌶️ Add Some Heat
Add a pinch of chili flakes to the tomato sauce if you enjoy a little spice.
Serving Suggestions
Serve this hearty bake with:
- Green salad
- Crusty French bread
- Steamed green beans
- Roasted vegetables
- Pickled vegetables
Storage
Refrigerate leftovers in a covered container for up to 3–4 days.
