Fluffy Japanese Soufflé Pancakes

- 2 large eggs, separated

1. Prepare the Batter

Spoon the batter into tall, thick rounds.
For extra-tall pancakes, add the batter in layers, allowing each layer to settle slightly before adding more.
Keep plenty of space between them.
Add a teaspoon or two of water to the empty part of the pan, being careful not to splash the pancakes.
Cover with the lid.
6. Cook Slowly
Cook for approximately 5–7 minutes over very low heat.
The bottoms should be golden and the pancakes should have risen noticeably.
Carefully flip each pancake using a wide spatula.
Cover again and cook for another 4–6 minutes, until the centers are fully cooked.
7. Serve Immediately
Transfer the soufflé pancakes to plates immediately.
