Dump Everything Keto Mississippi Pot Roast
This Dump Everything Keto Mississippi Pot Roast is an easy, flavorful slow-cooker dinner with tender beef, butter, tangy peppers, and savory seasonings. Everything goes straight into the crockpot, making this a simple low-carb comfort meal with minimal prep.
Ingredients
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 4 tablespoons unsalted butter
- 6–8 pepperoncini peppers, plus 2 tablespoons of their juice
- 1 packet ranch seasoning mix
- 1 packet au jus gravy seasoning mix
- ½ cup beef broth
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
Directions
1. Add the Roast
Place the chuck roast directly into a 6-quart slow cooker.
Pat it dry beforehand and trim away only excess surface fat if desired.
2. Add the Seasonings
Sprinkle the ranch seasoning, au jus seasoning, garlic powder, onion powder, black pepper, and dried thyme over the roast.
3. Add the Remaining Ingredients
Place the butter on top of the roast.
Add the pepperoncini peppers and their juice.
Pour the beef broth around the sides of the roast.
No stirring is necessary.
4. Slow Cook
Cover and cook on:
- LOW for 8–9 hours, or
- HIGH for 4–5 hours
The roast should be very tender and easy to shred with a fork.
For food safety, beef roasts should reach a safe internal temperature; for the classic pot-roast texture, continue cooking until the connective tissue has broken down and the meat is fork-tender.
5. Shred the Beef
Transfer the roast to a large plate or cutting board.
Use two forks to pull the beef into large pieces.
Return the shredded beef to the slow cooker and toss it with the flavorful cooking juices.
6. Serve
Serve hot with the juices spooned over the top.
For a keto-friendly meal, pair it with:
- Mashed cauliflower
- Roasted broccoli
- Green beans
- Sautéed spinach
- Cauliflower rice
- A simple leafy green salad
Recipe Tips
- Chuck roast is ideal because its connective tissue becomes tender during slow cooking.
- Check the labels on seasoning packets if strict keto is important, as some packaged mixes may contain added starches or sugars.
- Pepperoncini provide the signature tangy flavor without making the dish overly spicy.
- For deeper flavor, sear the roast before placing it in the slow cooker, although this isn’t necessary for the dump-and-go method.
- Leftovers can be refrigerated in an airtight container for 3–4 days.
- The shredded beef also makes excellent lettuce wraps or low-carb sandwiches.
