Crockpot Ravioli Lasagna
Crockpot Ravioli Lasagna is the ultimate easy comfort-food dinner. It has everything you love about traditional lasagna—rich tomato sauce, tender pasta, seasoned meat, and plenty of gooey melted cheese—but uses frozen ravioli instead of lasagna noodles. Everything cooks together in the slow cooker, making this a convenient meal for busy days.
Ingredients
- 1 pound ground beef or Italian sausage
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jar (24 oz) marinara or pasta sauce
- 1 can (14–15 oz) diced tomatoes, undrained
- 1 package (25–30 oz) frozen cheese ravioli
- 2 cups shredded mozzarella cheese
- ½ cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Brown the Meat
Heat a large skillet over medium-high heat. Add the ground beef or Italian sausage and cook for 6–8 minutes, breaking it apart as it cooks.
Add the chopped onion and cook for another 3–4 minutes, until softened.
Stir in the minced garlic and cook for about 30 seconds.
Drain any excess grease.
2. Prepare the Sauce
Add the marinara sauce and diced tomatoes to the skillet with the cooked meat.
Stir in the Italian seasoning, salt, and black pepper.
Allow the mixture to simmer for 2–3 minutes so the flavors begin to combine.
3. Start Layering
Lightly grease the inside of a 6-quart slow cooker.
Spread a thin layer of the meat sauce over the bottom.
Arrange a layer of frozen ravioli over the sauce. There’s no need to thaw the ravioli first.
4. Add the Cheese
Dollop some ricotta over the ravioli and sprinkle with mozzarella and Parmesan.
Add another layer of meat sauce, followed by another layer of frozen ravioli.
Continue layering until all the ingredients are used.
Finish with a generous layer of mozzarella and Parmesan on top.
5. Slow Cook
Cover the crockpot with the lid.
Cook on:
- LOW for 4–5 hours, or
- HIGH for 2–3 hours
Cooking times can vary depending on your slow cooker, so check toward the end of the cooking time.
Avoid repeatedly lifting the lid because this allows heat to escape and can increase the cooking time.
6. Let It Rest
Once the ravioli is tender and the cheese is completely melted and bubbly, turn off the slow cooker.
Let the lasagna rest uncovered for approximately 10–15 minutes before serving. This allows the layers to firm up slightly and makes it easier to scoop.
7. Garnish and Serve
Sprinkle the top with freshly chopped parsley and a little extra Parmesan if desired.
Serve warm with garlic bread and a crisp green salad.
Tips for the Best Crockpot Ravioli Lasagna
Keep the ravioli frozen: There’s generally no need to thaw it before layering. Thawing can make the pasta softer and more likely to break apart.
Don’t use too much liquid: The frozen ravioli releases some moisture as it cooks, so the sauce should be thick rather than watery.
Layer evenly: Spread the sauce and ravioli as evenly as possible so everything cooks consistently.
Don’t overcook: Once the ravioli is tender, stop cooking. Leaving it in the slow cooker for much longer can result in overly soft pasta.
Easy Variations
Meatless Ravioli Lasagna
Skip the beef or sausage and add sautéed mushrooms, spinach, zucchini, or bell peppers.
Italian Sausage Version
Use mild or hot Italian sausage for a richer, more savory flavor.
Spinach & Cheese
Add a layer of frozen chopped spinach that has been thawed and squeezed dry.
Extra Cheesy
Add provolone or a little shredded cheddar along with the mozzarella.
Spicy Version
Use spicy Italian sausage and add a pinch of red pepper flakes to the sauce.
Make-Ahead Option
You can assemble the layers in the slow cooker insert several hours before cooking. Keep the prepared dish refrigerated until you’re ready to cook it.
For food safety, don’t leave the assembled ingredients sitting at room temperature for an extended period.
Storage
Store leftover ravioli lasagna in an airtight container in the refrigerator for up to 3–4 days.
Reheat individual portions in the microwave or warm larger portions in the oven until heated through.
This crockpot version gives you the cozy, cheesy flavor of lasagna with a fraction of the assembly work—perfect for an easy weeknight family dinner.
