Serve them over mashed potatoes, rice, or noodles to soak up the delicious juices.
Ingredients
- 2 lb (900 g) sirloin steak, cut into bite-sized pieces
- ½ cup unsalted butter
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- 6–8 pepperoncini peppers
- ¼ cup pepperoncini juice
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Prepare the Steak
Cut the steak into bite-sized pieces, trimming away any large pieces of excess fat.
Pat the steak dry with paper towels and season lightly with black pepper and garlic powder.
2. Add Everything to the Crockpot
Place the steak bites in the bottom of a 6-quart slow cooker.
Sprinkle the ranch seasoning and au jus gravy mix evenly over the steak.
Add the pepperoncini peppers and pour in the pepperoncini juice.
Place the butter on top.
No additional broth is usually necessary, because the steak releases juices as it cooks.
3. Slow Cook
Cover and cook on LOW for 4–5 hours, or until the steak is tender.
Avoid cooking the steak much longer than necessary, as lean steak cuts can become dry or chewy when overcooked.
4. Stir the Sauce
Carefully stir the steak bites and rich cooking juices together.
Taste the sauce before adding additional salt because the seasoning and gravy mix can already be quite salty.
5. Garnish and Serve
Sprinkle with fresh parsley if desired.
Serve the steak bites hot over:
- Creamy mashed potatoes
- Egg noodles
- White rice
- Roasted potatoes
- Buttered vegetables
Spoon plenty of the flavorful cooking juices over the top.
Recipe Tips
- Sirloin works well because it is flavorful and easy to cut into bite-sized pieces.
- For the best texture, avoid overcrowding the slow cooker.
- Pepperoncini provide the signature tangy flavor without making the dish extremely spicy.
- Use unsalted butter so you have more control over the final saltiness.
- If you prefer a milder flavor, reduce the amount of pepperoncini juice.
- Leftovers can be refrigerated in an airtight container for 3–4 days.
