Crockpot Herb Chicken & Buttered Carrot Dinner

Ingredients
For the Chicken
- 2½ lb (1.1 kg) boneless, skinless chicken thighs or breasts
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
For the Buttered Carrots
- 1½ lb (680 g) carrots, peeled and cut into thick slices
- 3 tablespoons unsalted butter
- 1 tablespoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Directions
1. Prepare the Chicken
Pat the chicken dry with paper towels.
Combine the thyme, rosemary, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
Rub the seasoning mixture evenly over the chicken.
2. Layer the Crockpot
Place the carrots in the bottom of a 6-quart slow cooker.
Arrange the seasoned chicken over the carrots.
Add the minced garlic and butter.
Pour the chicken broth around the sides and drizzle the lemon juice over the chicken.
3. Slow Cook
Cover and cook on:
- LOW for 4–6 hours, or
- HIGH for 2½–3½ hours
Cook until the chicken reaches an internal temperature of 165°F (74°C) and the carrots are tender.
4. Prepare the Buttered Carrots
When the chicken is almost finished, transfer the cooked carrots to a bowl.
Melt the 3 tablespoons of butter in a small saucepan or skillet.
Stir in the honey, salt, and black pepper.
Pour the butter mixture over the carrots and toss gently.
5. Finish the Chicken
Remove the chicken from the slow cooker and spoon some of the flavorful cooking juices over the top.
Sprinkle with fresh parsley.
6. Serve
Serve the tender herb chicken alongside the warm buttered carrots.
