Ingredients
- 2½ lb (1.1 kg) boneless, skinless chicken thighs
- 1½ lb (680 g) baby red potatoes, halved
- 4 large carrots, peeled and cut into chunks
- 5 cloves garlic, minced
- 5 tablespoons unsalted butter, melted
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
Directions
1. Prepare the Vegetables
Wash the red potatoes and cut them in half.
Peel the carrots and cut them into evenly sized chunks.
Place the potatoes and carrots in the bottom of a 6-quart slow cooker.
2. Season the Chicken
Pat the chicken thighs dry with paper towels.
Season both sides with paprika, Italian seasoning, onion powder, salt, black pepper, and dried thyme.
