Crockpot Biscuit and Sausage Breakfast Casserole
Dump frozen raw biscuit dough into the crockpot with a few simple ingredients and let the slow cooker transform them into a warm, cheesy, savory breakfast casserole. It’s easy, filling, and perfect for lazy mornings, family brunches, or busy days.
Ingredients
- 1 package (16 oz) frozen raw biscuit dough
- 1 lb breakfast sausage, cooked and crumbled
- 6 large eggs
- 1½ cups shredded cheddar cheese
- 1 cup milk
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
1. Cook the Sausage
Brown the breakfast sausage in a skillet over medium heat, breaking it into small pieces as it cooks.
Cook until no pink remains, then drain excess grease.
2. Prepare the Crockpot
Lightly grease a 6-quart slow cooker with cooking spray or butter.
Cut the frozen biscuit dough into halves or quarters so the pieces distribute more evenly.
3. Layer the Ingredients
Place about half of the biscuit pieces in the bottom of the crockpot.
Sprinkle half of the cooked sausage and half of the shredded cheddar over the biscuits.
Repeat with the remaining biscuit pieces, sausage, and cheese.
4. Mix the Egg Mixture
In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Pour the egg mixture evenly over the ingredients in the crockpot.
5. Slow Cook
Cover and cook on LOW for 4–5 hours, until the biscuits are cooked through and the egg mixture is fully set.
Cooking times can vary depending on your slow cooker, so check the center before serving.
6. Rest and Serve
Turn off the slow cooker and let the casserole rest for 10 minutes.
Scoop onto plates and serve warm.
Recipe Tips
- Keep the biscuit dough frozen until you’re ready to assemble the casserole.
- Cut the biscuit pieces into smaller chunks so they cook more evenly.
- Don’t overload the slow cooker, as a very deep casserole can take longer to cook.
- You can substitute cooked bacon, ham, or diced cooked chicken for the sausage.
- Add diced bell peppers, onions, or green onions for extra flavor.
- Use Monterey Jack, pepper Jack, or mozzarella instead of cheddar.
- Make sure the center reaches 160°F (71°C) because the casserole contains eggs.
