Ingredients
- 2½ lb (1.1 kg) beef chuck roast, cut into large chunks

Directions
1. Season the Beef
Pat the beef dry with paper towels.
Season the pieces with paprika, thyme, salt, and black pepper.
2. Sear the Beef
Heat the olive oil in a large skillet over medium-high heat.
Sear the beef pieces for 2–3 minutes per side, working in batches if necessary.
