Ingredients
- 2 lbs (900 g) cube steak
- 1 medium onion, thinly sliced
- 8 oz (225 g) mushrooms, sliced
- 2 cans (10.5 oz each) cream of mushroom soup
- 1 cup beef broth
- 1 packet (1 oz) onion soup mix
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic, minced
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil, optional for searing
- 2 tablespoons chopped fresh parsley, optional
Directions
1. Season the Steak
Pat the cube steaks dry with paper towels.
Season both sides with black pepper and paprika.
2. Optional: Sear the Steaks
For extra flavor, heat olive oil in a skillet over medium-high heat.
Sear the cube steaks for approximately 1–2 minutes per side.
You don’t need to cook them through—they’ll finish in the slow cooker.
3. Prepare the Gravy
In a bowl, whisk together:
- Cream of mushroom soup
- Beef broth
- Onion soup mix
- Worcestershire sauce
- Minced garlic
Mix until smooth.
4. Layer the Slow Cooker
Place half of the sliced onions and mushrooms in the bottom of the crock pot.
Arrange the cube steaks on top.
Add the remaining onions and mushrooms.
Pour the gravy mixture evenly over everything.
5. Slow Cook
Cover and cook on:
- LOW for 6–7 hours, or
- HIGH for 3–4 hours
The steaks should be tender and the gravy rich and flavorful.
6. Finish
Carefully remove the steaks and stir the gravy.
If the gravy is thicker than you prefer, stir in a little warm beef broth.
Return the steaks to the slow cooker for a few minutes if desired.
Garnish with fresh parsley.
Serving Suggestions
Serve the cube steak and gravy over:
- Creamy mashed potatoes
- Egg noodles
- White rice
- Buttered noodles

Add a side of green beans, roasted carrots, or steamed broccoli for a complete meal.
Tips for Tender Cube Steak
Don’t skip the slow cooking: The extended cooking time helps tenderize the beef.
Sear for extra flavor: Browning isn’t essential, but it adds a deeper savory flavor.
Keep the lid closed: Every time you open the slow cooker, heat escapes and cooking time increases.
Use low heat when possible: LOW cooking generally gives the steak a particularly tender texture.
Want thicker gravy? During the final 20–30 minutes, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the gravy, and let it cook until thickened.
Storage
Refrigerate leftovers in an airtight container for up to 3–4 days.
Reheat gently on the stovetop or in the microwave with a splash of beef broth to loosen the gravy.
Tender cube steak, savory mushrooms, sweet onions, and rich gravy make this Crock Pot Cube Steak a simple, hearty dinner that tastes like it cooked all day.
