Crock Pot Coca-Cola Roast
Tender, juicy beef roast slow-cooked in a rich, savory sauce with Coca-Cola. The soda adds a subtle sweetness while helping create a flavorful, caramelized-style gravy. It’s an easy comfort-food dinner that’s perfect for serving with mashed potatoes and vegetables.
🥩 Ingredients
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 1 can (12 oz / 355 ml) Coca-Cola
- 1 can (10.5 oz / 298 g) cream of mushroom soup
- 1 packet (1 oz / 28 g) dry onion soup mix
- 1 tablespoon Worcestershire sauce
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon black pepper
- ½ teaspoon smoked paprika, optional
- 2 tablespoons olive oil
- 1 lb (450 g) baby potatoes, optional
- 3–4 carrots, cut into chunks, optional
- ½ cup beef broth, if needed
👩🍳 Instructions
1. Brown the Roast
Pat the roast dry with paper towels and season it with black pepper and smoked paprika.
Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side, until nicely browned.
Transfer the roast to the crockpot.
2. Add the Vegetables
Arrange the sliced onion, garlic, potatoes, and carrots around the roast.
3. Make the Sauce
In a bowl, whisk together the Coca-Cola, cream of mushroom soup, onion soup mix, and Worcestershire sauce.
Pour the mixture over the roast and vegetables.
4. Slow Cook
Cover and cook on:
- LOW: 8–9 hours
- HIGH: 4–5 hours
The roast is ready when it is very tender and easily pulls apart with a fork.
5. Make the Gravy
Remove the roast and vegetables from the crockpot.
If the cooking liquid is too thin, pour it into a saucepan and simmer for several minutes until reduced.
For a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the hot liquid, and cook until thickened.
🍽️ Serving
Slice or shred the tender roast and spoon plenty of the Coca-Cola gravy over the top.
