For the Mashed Potatoes

- 4 tablespoons butter
- ½ cup warm milk
- ¼ cup heavy cream, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cloves roasted or minced garlic, optional
👩🍳 Instructions
1. Prepare the Chicken
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry.
Using a sharp knife, carefully cut a pocket into the thickest part of each chicken breast. Don’t cut completely through.
2. Make the Filling
In a bowl, combine the softened cream cheese, mozzarella, chopped spinach, garlic, Italian seasoning, salt, and black pepper.
Mix until well combined.
Stuff each chicken breast with the cheese and spinach mixture.
Secure the opening with toothpicks if necessary.
3. Prepare the Coating
Place the flour in one shallow bowl.
Beat the eggs in a second bowl.
In a third bowl, combine the panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and black pepper.
Dip each stuffed chicken breast into the flour, then the beaten eggs, and finally the seasoned panko mixture.
Press gently so the coating adheres well.
4. Crisp the Chicken
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Place the coated chicken breasts in the skillet and sear for 2–3 minutes per side, until golden brown.
Transfer the skillet to the preheated oven.
Bake for approximately 18–25 minutes, depending on the thickness of the chicken.
The chicken should reach an internal temperature of 165°F (74°C) at the thickest part.
Carefully remove all toothpicks before serving.
5. Make the Mashed Potatoes
While the chicken cooks, place the cubed potatoes in a large pot and cover with cold salted water.
Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain thoroughly.
Return the potatoes to the warm pot.
Add the butter, warm milk, cream if using, salt, and black pepper.
Mash until smooth and creamy.
For garlic mashed potatoes, mix in the roasted or minced garlic.
🍽️ Assemble the Plate
Spoon a generous serving of mashed potatoes onto each plate.
Slice the crispy stuffed chicken breast and place it alongside the potatoes.
Spoon any flavorful pan juices over the chicken and potatoes.
Garnish with fresh parsley and a little grated Parmesan.
⭐ Tips for Extra-Crispy Chicken
- Dry the chicken well before coating it.
- Panko breadcrumbs create a crispier crust than regular breadcrumbs.
- Don’t overcrowd the skillet when searing.
- Searing before baking gives the coating a beautiful golden crust.
- Let the chicken rest for 5 minutes before slicing.
- Always check the chicken with a thermometer rather than relying only on cooking time.
🍄 Optional Variations
Try filling the chicken with:
- Spinach and feta
- Broccoli and cheddar
- Mushrooms and Swiss cheese
- Sun-dried tomatoes and mozzarella
- Bacon and cream cheese
